摘要
对课题组研制的4种新型膏状腐乳进行了相关微生物及理化指标的检测,目的是对该类膏状腐乳的卫生质量进行初步评价,从而为新型腐乳产品的开发提供参考,试验结果表明:4种口味的膏状腐乳均具有良好的卫生质量,可以进一步进行中试生产试验。
This article discussed about the physical-chemical and microbial indicatrix of four new types of past sufu made by our research team in order to evaluate the sanitation quality of this kind of products and afford reference for developing of these types of sufu. The results showed that this kind of sufu has good sanitation quality and is suitable to be produced. Key words: sufu; paste shape ; soft package ;indicatrix; detection
