摘要
本文研究福州黑猪、杜洛克、斯格和新长白猪及其杂种猪共１２个品种或组合８６头的肌肉品质遗传特性。结果表明：地方猪种福州黑猪各项肉质品质指标均优于各引进肉用型猪种，福州黑猪肌肉ｐＨ值高，为６．２４±０．１６；肌肉颜色在正常范围，评分为３．３３±０．２１；肌肉大理石纹分布理想，评分为３．３３±０．２１；失水率（％）低，为１９．２８±５．４９；肌纤维细，直径为４３．０５±６．１２μｍ。同时表明，在引进猪中，各肉质性状表现明显差异。研究还表明：以福州黑猪为母本，以引进猪种为父本的二元和三元各杂交组合中，杂种猪的肉质指标介于两亲本平均值，但各有偏倚现象，以杜洛克为终端父本的杜福、杜长福的肉质为优。在进行瘦肉型商品猪开发利用时，为防止出现ＰＳＥ肉，要慎重选择父本。
The meat hereditary character of Fuzhou Black Pig,Duroc,New Landrance,Sige and the cross-bred pig,altogether 12 breeds or cross-breeds of 86 pigs,was studied on this paper. The result shows that the meat indexes of the local Fuzhou Black Pigs are higher than that of all kinds of introduced rneat pigs. The rneat pH value of Fuzhou Black Pig is high,which is 6.24 ± 0.16;the colour of meat is in nomorl range,which is 3.33±0. 21;the marbling of meat is dis- tributed well,which is 3.33±0.21;the ratio of water loss(%)is low,which is 19.28±5.49;the meat fiber is thin and its diameter i,43.05±6.12μm. It shows at thexame time that in the intro- duced pigs the pork characteritics present sharp differences. The result also shows that in the cross breds,used Fuzhou Black Pigs female parent and the introduced pigs as male parent,the meat indexes of the cross-bred pigs are hetween the average value of the two parents,but with their own characters,The meat quality of crossbreds DF and DNF is the highest by tising Duroc as the terminal male parent.When the lean-meat type pigs are developed and tixed,the male parent must be selected with great care in order to prevet PSF meat.
