摘要
以迟熟中粳稻品种"南粳44"为试材,研究了麦秸全量还田条件下,225、300和375 kg/hm23个施N水平及其基肥、蘖肥、穗肥施N配比分别为4∶4∶2、4∶3∶3和4∶2∶4等处理对稻米蛋白质含量及淀粉粘滞性的影响。结果表明:稻米蛋白质含量随施N量增加而增加;当施N量一定时,随着穗肥N素比例的增加,稻米蛋白质含量也不断增加。N素运筹对稻米RVA谱不同特征值的影响程度区别较大,峰值粘度、热浆粘度和最终粘度在所设处理间的差异达显著水平,而崩解值、消减值、峰值时间和糊化温度在所设处理间的差异则不显著。该文还对稻米淀粉粘滞性特征值及稻米蛋白质含量进行了相关分析。
Taking late-maturing mid-season rice variety 'Nanjing 44' as the tested material,this paper studied the effects of three nitrogen application rates(225,300 and 375 kg/hm2) and three nitrogen application ratios(base fertilizer∶tillering fertilizer∶panicle fertilizer = 4∶4∶2,4∶3∶3,4∶2∶4) on rice protein content and viscosity under the condition of returning the whole wheat straw to rice field.The results indicated that the rice protein content increased along with the increase of nitrogen application rate.When the application rate of nitrogen was at a certain level,rice protein content increased along with the increase of nitrogen ratio in panicle fertilizer.The great differences in rice RVA spectrums were caused by nitrogen application.Peak viscosity,hot paste viscosity and final viscosity showed significant differences among different treatments,but breakdown value,setback value,peak time and pasting temperature showed no obvious differences among various treatments.The correlation analysis between rice starch viscosity eigenvalue and rice protein content was also conducted in this paper.
