摘要
用浓度为4%~8%的纤维素酶,在液叶比3:10,45~50℃,相对湿度85%以上、pH5.0~6.0的条件下,渥堆砖茶湿坯在25~30h,传统的康砖茶加温保湿渥堆36~38h,纤维素酶的引入可大大提高砖茶水浸出物的含量及总糖含量,对品质有明显的改善作用。
The paper describes the use of cellulase in processing of brick tea and its effect on thequality of this tea. The results showed that suitable technological targets had been foundby comparing the effects of different consistency of the enzyme,ratio of water and tea anddifferent value of pH. When cellulase is used for the process of brick tea, its consistency is4%~5%, the ratio of water and tea is 3:10, the best temperature is 45~50℃, thereative humidity is over 85%,the value of pH is 5.0~6. 0 and the time of piles is 25~30h. But,traditionally,the time of heat and wet preservation of Kang Brick Tea is 36~38h.The cellulase used in the process of the tea can not only greatly increase the content ofthe aqueous extracts from tea and the total content of soluble carbonhydrate but also sig-nificantly improve the quality of brick tea.
