大豆蛋白酶抑制剂活性的测定 被引量:3

摘要 在测定胰蛋白酶活性和胰凝乳蛋白酶活性的基础上建立了蛋白酶抑制剂活性测定的方法。并用此方法测定了3种蛋白酶抑制剂的活性,即CM-BBI、粗BBI和豆浆晶粗BBI,其活性(每mg抑制剂蛋白抑制酶的μg数)分别为16609、1441和220.6。为了衡量该法的可靠性,我们还测定了Sigma厂出产的胰蛋白酶抑制剂的活性,所得结果与该厂测定的结果一致。故可利用该法选择抗癌食物。 An assay of protease inhibitor activity was established on the basis of assay of trypsin and chymotrypsin activities. Three protease inhibitors, namely CM-BBI, crude-BBI and soy bean milk crystal crude-BBI, were determined by this method. Their activities (μg of enzyme used to inhibit one mg of inhibitor protein) were 16 609, 1 441 and 221 respectively. The ac tivity of the trypsin inhibitor from Sigma was also determined by our method. The result ob tained was identical with that of Sigma. Therefore, our method is highly reliabe. This method is an effective method for selecting the anticancer food.
