摘要
通过对小麦制粉生产工艺的调研及对主要生产环节样品的微生物分析,了解了面粉中污染微生物的主要途径及其污染程度。结果表明,面粉中微生物污染源主要来自:原料小麦;原料在加工过程中的清理程度;润麦过程及润麦水的卫生状况;磨粉机内的积粉;面粉中的麸星。
The technological process of flour milling and microoganism in samples at main procedure in production were inveshgated and analyzed. The sources and level of microorganism contemination were understanded. The results showed that the contamination sources of flour maily come from original wheat, the residue in milling machine and bran in flour and contamination depends on cleanness degree during process, the process of moistening wheat and hygienic conditions of the water for moistening wheat
