摘要
在牛乳脂肪有关的光学量已经确定的基础上，测量了全乳稀溶液的光散射和光透射的特性，建立了它们与牛乳脂肪光学量之间的函数关系，为求出牛乳蛋白质的散射常数ｕ＿（ｓｐ）和浓度公式提供了依据。
The scattering coefficient，absorption coefficient and concentration of milkproteins can be achived by comparing of the optical properties of diluted milk fat and di－luted milk，The intensity ratio of scattering light and transmissive light is employed toreprasent the op tical properties. The calculation and conclsion are valid when expressionof 0．038％ ≤c_p≤0．14％％stands.
