摘要
1973年,Madson等人首次从地衣芽孢杆菌(Bacillus licheniformis)提取到热稳定的α-淀粉酶以来,国外已将高温α-淀粉酶投入了工业生产。丹麦Novo公司、美国Miles公司皆相继采用地衣芽孢杆菌生产高温α-淀粉酶。然而在国内该酶仍有待开发。现已发现能产生高温α-淀粉酶的好热细菌主要包括:芽孢杆菌属(Bacillus)的好热性种,高温单胞菌(Thermomonospota)和耐热假单胞菌(Pseudomonas theimoamylolyticus)等。但研究较多。
A new strain of Bacillus producing a thermostable α-amylase was isolated from the Traditional Chinese Liquor Ferment-pits and has been identified and designated as Bacillus licheniformis JS-5. The α-amylase released by strain JS-5 showed a wide temperature-range of activity with the optimum being 90℃. This enzyme could dextrinize starch at a temperature of as high as 100℃. It also has an extensive pH-range of activity of about 4.5—10.5. The production conditions of the α-amylase by JS-5 were investigated and the possible industrial application is evaluated in the paper as well.
