谷朊粉副产品麦淀粉及浆水开发利用的探讨(摘要) 被引量:2

摘要 谷朊粉即谷物蛋白质,因蛋白质亦称朊,故叫谷朊粉。谷朊粉是从面粉中提取加工的,主要成分是麦胶蛋白和麦谷蛋白,它们占蛋白质总量的75%。麦胶蛋白和麦谷蛋白中的谷氨酸含量分别是42.8%和24.7%,是所有谷物中含量最高的一种,而且具有与其它谷物蛋白质不具备的某些独特性质。
