摘要
利用透射电子显微镜研究了腐竹的超微结构.结果表明:在腐竹的形成过程中,蛋白质和脂肪的分布具有一定的规律性,脂肪被蛋白质所包容.
The ultrastructure of fu-zhu has been studied with the help of the transmission eletron microscope.The results show that the distribution of protein and fats is regular,and the fats are packed by the protein in the forming process of fu-zhu.
