摘要 植物鞣制中存在一定数量的黄酮类非鞣质多元酚,它们在植——铝结合鞣中起什么作用?本次采用紫外分光光度法、红外吸收光谱法和核磁共振波谱法,第一次证明黄酮类非鞣质能与铝形成络合物,络合点之一是黄酮体的4-羰基和5-羟基与铝结合,形成六员环螯合物。如果黄酮体上还有邻位二羟基,它们也可与铝形成五员环螯合物。这些络合物在植——铝结合鞣中的作用,如同鞣质多元酚——铝络合物一样,在胶原分子链间形成交联和网状交联。 A number of non-tannins that exist in vegetable tanning material are flavonoids.How to do in the vegetable-aluminum combination tannage? The first study by UV,IR,and ^(13)C-NMR spectra shows that a six-member ring chelateattaches both 4-carbonyl and 5-hydroxyl groups of flavonoids, such as morin and quercetin,to basic aluminum atoms and that a fivemember ringg complex could be formedb etween both adiecent hydroxyl groups and aluminum if there are two adiecent hydroxyl groups in flavonoid molecule.As the tannin polyphenol-aluminum complexes in the precious studies, (2, 3)the effects of the chelates are much the same in crosslinkage and net-work structures that might be formed by both collagen molecule chains.On the other hand, the structure stability of the chelates are increased by 3-, and 7-hydroxyl groups in flavonoid molecules.
