摘要
用扫描电镜研究关中几个小麦品种(系)籽粒组织结构与磨粉品质关系的结果表明,胚乳栅栏淀粉细胞的数量,糊粉层细胞的质量与小麦籽粒角质率、容重和出粉率具有密切的关系;基质蛋白质质量与数量以及与淀粉粒结合的紧密程度对小麦品种磨粉品质和工艺有较大的影响。
By means of SEM, the relationships between grain structure and milling quality of some main wheat varieties in Guanzhong area have been studied. The results show that a mount of endosperm palisade cells and quality of aleurone layer cells have a close relationship with wheat grain cutin rate, test weight and flour rate. The quality and a mount of protein matrix, the fixed degree of protein matrix with starch granules have greater effects on milling quality and milling technology of wheat varieties.
