摘要 针对传统方法检测牛乳细菌总数时间长,操作复杂等缺陷,根据牛乳中细菌活动繁殖后的产物还原酶间接使刃天青试剂发生褪色反应的机理,采用色差法,给出了色差与菌群浓度的拟合方程,对牛乳中菌群浓度进行快速实验检测.结果表明,该方法操作简便,30min即可给出检测结果,比传统平皿菌落计数法(48h)有很大提高.当菌群浓度大于41万/mL,检测误差小于10%. The present methods applied in the detection of bacteria chroma in dairy product are not only time-consuming but also complex to operate. The reductase produced by bacteria can cause resazurm to change color. In view of this, a new method -by building a model between color difference and bacteria colony to detect dairy products, is put forward in this paper. At the same time, a mathematic model between bacteria colony chroma and color difference is built. The experimental results prove that this method is easy to operate, and it can give the result within thirty minutes. This method is faster than the plate counting (48h). When the bacteria chroma is greater than 420 thou-sand/mL, the detection error is less than 10%.
