温热环境因素影响猪肉品质的研究进展 被引量:4

摘要 热环境因素是对猪影响较大的环境因素。热环境能导致热应激 ,影响猪的生理机能 ,引起猪肉的生化性质改变 ,从而降低猪产品品质。本文综述了热环境因素的概念、猪的热应激对其产品品质的影响 ,并从生化特性的角度分析肉质变化根源 。 Thermal environment is one of the important environmental factor influencing on swine. Heat stress that was induced by high ambient temperature would alter physiological function, further, affect biochemical character of pork and debase meat quality in pigs. Concept of hot environment, the responses of pigs to heat stress and the effects of heat stress on meat quality were reviewed in this paper.
