摘要
院校餐饮管理教学,传统上多在校内,以教师的可能尽量使之实践化,其教学手段和过程与其他理论课相差无几。从选择餐饮主题切入,进而系统指导学生由筹建创店到经营管理,全过程分模块深入课程学习;先设定目标,再引导学生寻找路径、方法,最终实现目标,颠覆了传统的教学模式,使学生有创意、自觉主动猎取知识、积累经验,事实上,是还餐饮管理以操作练兵、理论实践互动益智的本质。
In the teaching of catering management,teachers are traditionally responsible for the practice.Its teaching means and process are more or less the same as those in other theoretical courses.We try to start form the selection of the subject,and then systematically guide the students from making preparations for the setting up of a shop to operation and management.Target is set first and the students are guided to seek for the path and way.The target is ultimately achieved.So we have changed the traditional teaching mode so that the students are able to gain knowledge and accumulate experience innovatively and conscientiously.In fact,students should stress operation and achieve interaction between theory and practice in catering management.
