Comprehensive quality evaluation and principal component analysis of Crassostrea gigas from North Yellow Sea,China:characterizing nutritional,flavor,and functional profiles

Crassostrea gigas has good taste and high nutritional value;however,there are few assessments of comprehensive and panoramic analyses of the nutritional quality of the northern oyster.To study the nutritional characteristics of C.gigas from different sources(ploidy,region,size,and culture mode),C.gigas from various ploidy(diploid and triploid),regions(Rushan,Off-site fattening,and Rongcheng),sizes(small,medium,and large)and culture modes(nearshore and offshore)were selected for comparative analyses.The nutritional components(moisture,protein,fat,and mineral),flavor substances(taste amino acids,nucleotides,and succinic acid),and functional indices(eicosapentaenoic acid(EPA),docosahexaenoic acid(DHA),and taurine)of C.gigas were determined.Principal component analysis(PCA)was used to comprehensively evaluate the oysters and investigate the variations in nutritional quality.The PCA results indicate that protein,essential fatty acids,selenium,zinc,taste amino acids,taurine,EPA,and DHA were core components contributing to 82.25%of the cumulative variance,providing a more comprehensive reflection of the nutrient composition of C.gigas.The extensive quality rankings for the C.gigas were as follows:diploid>triploid,Rushan>fattening>Rongcheng,medium>large>small,and offshore>nearshore.The score rank revealed that diploid oysters of medium-size from Rushan demonstrated superior nutritional quality compared to other tested samples.This is the first comprehensive and systematic investigation of C.gigas in northern China to reveal the feature of nutrients,flavor,and functional components.The study provided data support for the culture,consumption,processing,research,and nutritional quality improvement of oyster industry. 展开更多

Triacylglycerol(TAG)components in human milk,infant formulas with different fat sources,and plant oils(palm oil,flaxseed oil,sunflower oil,corn oil,soybean oil,coconut oil,low erucic acid rapeseed oil,and high oleic acid rapeseed oil)were analyzed and compared using ultraperformance supercritical fluid chromatography coupled with quadrupole time-of-flight mass spectrometry(UPSFC-Q-TOF-MS).Distinct TAG profiles were identified by lipidomics,principal component analysis(PCA),and heatmap visualization.Human milk was characterized by a high abundance of medium-and long-chain triacylglycerols(MLCTs),saturated-unsaturated-unsaturated(SUU)-type TAGs(sn-2 palmitic acid).In contrast,plant oils lacked MLCTs and SUU-type TAGs,containing mainly TAGs esterified long-chain polyunsaturated fatty acid.Breast milk contains about 27%MLCT,about 50%SUU-type triacylglycerols(which contain about 34%UPU-type triacylglycerols),which is significantly different from plant oils,structured fats and infant formulas.These findings provide a clear basis for optimizing the fat blend in infant formula to better mimic the unique TAG profile of human milk,thereby improving energy delivery and nutrient absorption for infants. 展开更多

Herein,a reusable and portable surface-enhanced Raman spectroscopy(SERS)sandpaper was successfully synthesized for the sensitive detection of S-fenvalerate in foods.Commercial sandpapers were decorated with Ag@SiO2@Au nanoarrays via a liquid-liquid interface self-assembly method.The capacity of sandpaper to float directly on the cyclohexane-water interface allows nanoarrays to be formed directly on it,thereby minimizing stacking issues typically associated with nanoarray assemblies and significantly enhancing the sensitivity of S-fenvalerate detection.Moreover,the SERS sandpaper was reusable and portable due to its strong adhesion of the nanoarrays.Under optimized testing conditions,the developed SERS sandpaper method was capable of detecting S-fenvalerate,demonstrating a strong linear response within a concentration range of 10^(–7)–10^(3)μmol/L,with a limit of detection of 1.92×10^(−8)μmol/L.The analysis of spiked food samples containing S-fenvalerate using the developed SERS sandpaper afforded excellent recoveries(92.2%−109.7%).Additionally,the SERS sandpaper was successfully applied to quantify S-fenvalerate in real food samples,with results consistent with analyses conducted using gas chromatography. 展开更多

Both linoleic acid(18:2 n-6,LA)andα-linolenic acid(18:3 n-3,ALA)are essential fatty acids for infants.The contents of LA and ALA,and their ratio exhibited significant changes in human milk over the past 4 decades,which were not well summarized.Here,we summarized these values in 9898 human breast milk samples of 6664 mothers from 50 countries in 81 studies.A literature search was conducted using PubMed,Embase,and Web of Science between January 1980 and October 2023.The 95%confidence interval of LA/ALA ratio across lactation and gestation ranged from 14.24 to 31.26.The LA content was higher in China and Turkey(>20%)whereas the ALA content was below 1%in Africa.The LA/ALA ratio in countries along the Mediterranean coast exceeded 20 or even 30.LA and ALA contents increased significantly(P<0.01)while the ratio remained stable over the last 40 years.Multivariate meta-regression results showed that regions significantly(P<0.01)determined the LA,ALA,and LA/ALA ratio.Especially,maternal diet could definitely explain the variation while the effects of gestational age,lactation period was not significant.Clinical trials demonstrated that decreasing the LA/ALA ratio increased docosahexaenoic acid(22:6 n-3,DHA)status,reduced arachidonic acid(20:4 n-6,AA)contents,exerted no effect on the visual function of infants,and reached no consensus on growth.The current review aims to provide an overview on the LA and ALA contents and their ratio in human breast milk to raise concern in infant formula. 展开更多

Linoleic acid alleviates mood disorders in mice by modulating microglia differentiation and arachidonic acid metabolism

In previous research,we demonstrated that long-term consumption of thermally oxidized oil leads to neuroinflammation and anxiety in mice.Therefore,in this study,we employed polar lipid components from thermo-induced oxidized oil to induce neurodamage.Behavioral assessments revealed that both the linoleic acid and AUDA(a classical inhibitor of soluble epoxide hydrolase)groups exhibited significantly reduced anxiety-like behaviors compared to the model group(P<0.05).Immunofluorescence analysis indicated that microglial activation in the hippocampus was attenuated in both the linoleic acid and AUDA groups relative to the model group,accompanied by a reduction in the m RNA expression of pro-inflammatory cytokines(IL-1β,IL-6,NOS2,TNF-α)and an upregulation of neuroprotective factors(IL-4,IL-10,BDNF).Lipidomic profiling of hippocampal tissue revealed that the lipid composition of the linoleic acid group closely resembled that of the AUDA group,with a significant downregulation of cardiolipin(CL)compared to the control group,consistent with alterations in the membrane potential channel receptor TRPC1.Both linoleic acid and AUDA inhibited the m RNA expression of EPHX2,leading to an increase in epoxyeicosatrienoic acids(EETs)levels.Furthermore,linoleic acid upregulated the expression of cytochrome P450 enzymes(CYP2J6)and lipoxygenase(LOX2S),which further upregulated the synthesis of EETs,and increased the content of 9-HODE and 13-HODE.These findings collectively suggest that linoleic acid alleviates neuroinflammation by modulating microglial differentiation and attenuates neurodegeneration induced by thermally oxidized oil through the regulation of arachidonic acid metabolism and the linoleic acid metabolic pathway,leading to the production of neuroprotective lipid mediators.Therefore,linoleic acid may serve as a potential neuro-nutrient for the treatment of anxiety disorders.This provided a scientific basis for the development of specialized medical foods aimed at protecting neural health. 展开更多

Aflatoxin B_(1)(AFB_(1))in food is a threaten to food safety and human health.In this study,a colorimetric and fluorescent dual-mode aptamer sensor was constructed for rapid and accurate detection of AFB_(1)based on polyvinylpyrrolidone-gold-copper bimetallic nanoclusters(PVP-Au/Cu NCs)and Mn_(3)O_(4)nanoparticles(Mn_(3)O_(4)NPs).In the presence of AFB_(1),the AFB_(1)aptamer on the surface of Mn_(3)O_(4)NPs specifically bound to AFB_(1).The oxidase-like activity of Mn_(3)O_(4)NPs was restored and 3,3',5,5'-0tetramethylbenzidine(TMB)was oxidized to oxidized TMB(ox TMB),which quenched the orange fluorescence of the PVP-Au/Cu NCs.With AFB_(1)concentrations increasing,the blue color of ox TMB deepened,the fluorescence quenching efficiency was enhanced.The working range was 0–56μg/Lwith a limit of detection(LOD)of 0.36μg/L(colorimetric),and2.86–40.00μg/L with a LOD of 0.29μg/L(fluorescent).In addition,the established sensor was successfully applied to determine AFB_(1)in milk,rice,oats,and corn,with a recovery rate of 91.1%–107.5%.This study provides an insight for fabricating a sensitive,efficient,and accurate analytical platform for rapid detection of AFB_(1)in food. 展开更多

Trends in physical fitness among children and adolescents in Europe:A systematic review and meta-analyses during and after the COVID-19 pandemic

Background:Physical fitness is a key indicator of current and future health in children and adolescents.Evidence suggests that fitness levels have declined then stagnated in recent decades,but it remains unclear how the coronavirus disease 2019(COVID-19)pandemic has impacted this trend.Methods:We conducted a systematic review and meta-analyses to assess pandemic-related changes in physical fitness among children and adolescents(0-19 years)in the World Health Organization European Region.Seven databases were searched up to February 28,2025 for studies reporting validated pre-and during/post-pandemic fitness measurements.Two reviewers independently performed screening,data extraction,risk-of-bias assessment(Risk Of Bias In Non-randomized Studies-of Exposure)(ROBINS-E),and certainty grading(Grading of Recommendations,Assessment,Development and Evaluation)(GRADE).Random-effects meta-analyses yielded standardized mean differences(SMDs)with 95%confidence intervals(95%CIs).Subgroup analyses examined sex,age,year,and national restriction severity(Oxford Stringency Index).Results:Thirty-two studies comprising 270,179 participants and 1,519,386 fitness measurements from 17 European countries were included.Cardiorespiratory fitness declined significantly during the pandemic,especially in 2021,with reductions in endurance(SMD=-0.43;95%CI:-0.61 to-0.25)and speed(SMD=-0.29;95%CI:-0.61 to 0.03).While speed returned to baseline by 2023,endurance remained below pre-pandemic levels(SMD=-0.10;95%CI:-0.12 to-0.08).Girls and adolescents were disproportionately affected.In contrast to cardiorespiratory fitness,muscular fitness remained largely unchanged.Stricter national regulations were associated with greater declines in cardiorespiratory fitness.Conclusion:COVID-19 pandemic restrictions were associated with a marked decline in cardiorespiratory fitness in European children and adolescents,with levels not recovered by 2023.These findings call for urgent,targeted public health interventions to improve physical fitness and prevent long-term health consequences. 展开更多

To investigate the in vitro digestion and fermentation properties of soybean oligosaccharides(SBOS)extracted from defatted soybean meal,the changes in monosaccharide composition and molecular mass were analyzed.Subsequently,the effect of SBOS on microbial community structure and metabolites was studied by 16S rRNA gene sequencing and untargeted metabolomics based on liquid chromatography-mass spectrometry.Results showed that SBOS was not easily enzymolyzed during simulated digestion and could reach the large intestine through the digestive system.The significant decrease in the molecular mass of SBOS after in vitro fermentation indicated its utilization by the gut microbiota,which increased the contents of short-chain fatty acids and lactic acid,thereby reducing the pH of the fermentation broth.Moreover,the core community was found to consist of Blautia,Lactobacillaceae,and Pediococcus.SBOS up-regulated beneficial differential metabolites such as myo-inositol,lactose,and glucose,which were closely related to galactose,amino sugar,and nucleotide sugar metabolism.This study will provide a reference for exploring the relationship between the gut microbiota and the metabolites of SBOS,and provide a basis for the development and application of SBOS as an ingredient for functional products. 展开更多

In order to study steamed bread quality traits and explore good wheat cultivars, 25 wheat cultivars grown in Shandong province were used through one-process fermentation procedure to examine the variability of steamed bread quality traits and the correlation between quality and score. The results showed that all the steamed bread quality traits expressed large variable coefficient except volume, L* value, l* value and cohesiveness traits, which suggested that the genetic diversity made from wheat in Shandong province was large. The average comprehensive score of the steamed bread was 76.8 for the tested 25 varieties, and ten varieties reached the good steamed bread level, which were Liangxing 99, Luyuan 205, Jimai 22, Jinan 17, Tainong 19, Wennong 17, Huaiyin 84137, and Huaimai 8. The main quality factors affecting the steamed bread score were volume, L* value, A* value, hardness, chewiness, and adhesiveness. Among these factors, the adhesiveness has a significantly positive correlation with the hardness and cohesive, and the volume has a significantly positive correlation with the A* value. The volume, L* value has a significantly positive correlation with score, A* value, hardness and chewiness, and gumminess has a significantly negative correlation with the score. There was no correlation between the score and other traits. The results will benefit the understanding of steamed bread quality in wheat cultivated in Shandong. &#108; 展开更多

The cold plasma(CP)technique was applied to alleviate the contamination of polycyclic aromatic hydrocarbon(PAH)in this investigation.Two different CP treatments methods were implemented in the production of beef patties,to investigate their inhibition and degradation capacity on PAHs.With 5 different cooking oils and fats addition,the inhibition mechanism of in-package cold plasma(ICP)pretreatment was explored from the aspect of raw patties fatty acids composition variation.The results of principal component analysis showed that the first two principal components accounted for more than 80%of the total variation in the original data,indicating that the content of saturated fatty acids was significantly positively correlated with the formation of PAHs.ICP pretreatment inhibited the formation of PAHs by changing the composition of fatty acids,which showed that the total amount of polyunsaturated fatty acids decreased and the total amount of monounsaturated fatty acids increased.Sensory discrimination tests demonstrated there were discernable differences between 2 CP treated samples and the controls,utilization of the ICP pretreatment in meat products processing was expected to achieve satisfying eating quality.In conclusion,CP treatment degraded PAHs through stepwise ring-opening oxidation in 2 reported pathways,the toxicity of PAHs contaminated products was alleviated after CP treatment. 展开更多

Caffeine intake by pregnant women, adults and children can be harmful to the health of all particularly fetuses if the intake exceeds the permissible limits. Therefore, it is of fundamental importance to measure its concentration accurately using certified reference materials (CRMs). In the literature, no scientific details are published about the certification of caffeine standard solutions, and therefore, the present article covers this gap. A batch of caffeine solution was prepared in concentration of 1000 mg/kg and bottled. Homogeneity and stability of the candidate reference material were assessed by HPLC-UV and the results showed that the material is homogenous and stable enough. Characterization of the caffeine reference material was performed by HPLC-UV, LC-MS/MS and UV-VIS-NIR spectrophotometer in three different days and the characterization uncertainty was estimated in accordance with the requirements of ISO GUM. The certified value (999.86 ± 8.57 mg/kg) was derived as a weighted mean from the gravimetry and the three characterization methods and the certified uncertainty was calculated according to ISO Guide 35. This study established models coupling Pseudomonas fluorescens growth,respiration,and dynamic O_(2)and CO_(2)change to evaluate effects of O_(2)/CO_(2)transmission rates(OTR/CTR)on quality attributes of fresh-cut cherry radish(Raphanus sativus L.var.radculus pers)packed in biaxially oriented polyamide/low-density polyethylene(BOPA/LDPE)and polyethylene(PE)films during cold storage.The Baranyi model successfully modeled the growth of P.fluorescens.Microbial growth kinetics,includingμmax andλof P.fluorescens decreased with the increased OTR/CTR level of packaging films.Starting from the 4th day-storage,the respiration rates(RRs)remained unchanged until the end of cold storage,and the plateau of RR increased with the increase in OTR/CTR levels.The O_(2)content was significantly lower and CO_(2)content was higher in BOPA/LDPE films with OTR5 and OTR48 compared with that in PE films with high OTR where O_(2)ingress through permeation kept high and compensated O_(2)consumed by respiration of fresh-cut cherry radish.The difference in dynamic gas change influenced quality attributes and sensory properties as well.The BOPA/LDPE as a high barrier film extensively maintained color,total soluble solid content,firmness,nutrients and therefore,extended shelf life of cherry radish to 12 d,which was longer than that packed in the PE films(9 d)as low barrier films.The established coupling gas exchange models conjugated to the Baranyi model could be further utilized for predicting dynamic gas change and RR of other types of fresh-cut vegetables where Pseudomonas are dominant for spoilage. 展开更多

The objective of this study is to determine the factors responsible for the acidification of Burundi palm oils. The investigation of the duration of fermentation of palm fruits performed among artisanal producers found that more than 89% of producers from commune of Rumonge ferment for more than 5 days while more than 61% of those from commune of Mutimbuzi ferment for 4 days. The determination of acid value using the method of ISO 660:2009 showed that Dura and Tenera varieties fermented for 4 days had respectively 5.9 ± 2.3 and 5.8 ± 1.8 mg of KOH/g of oil for clustered fruits, 7.03 ± 3.4 and 7.02 ± 3.2 mg of KOH/g for destemmed fruits. After 8 days, the acid values of Dura and Tenera varieties obtained were respectively 10.9 ± 4.7 and 12.5 ± 5.4 mg KOH/g for clustered fruits, 12.5 ± 5.4 and 12.5 ± 4.1 mg KOH/g for destemmed fruits. No significant difference was recorded between varieties. On the other hand, a highly significant difference at p < 0.05 was obtained between fruits fermented in the open air (e.g. around the foot of the oil palm, FFOA), in a shed when the fruits were not covered (SFNC) and in a shed when the fruits were covered by branches or straw (SFC). At 8 days of fermentation, the acid values of FFOA, SFNC and SFC were 9.1 ± 0.7 < 12.6 ± 0.8 < 17.7 ± 1.4 for destemmed fruit and 9.1 ± 0.7 < 13.2 ± 1.3 < 13.2 ± 3.2 for clustered fruit, respectively. In light of these results, the acidity of Rumonge palm oil is probably due to the long fermentation time and the technique of covering the fruits during fermentation. These results will allow producers to extract good quality oil and consequently improve the health of consumers. 展开更多

Assessing the impact of anthropogenic volatile organic compounds(VOCs)on ozone(O_(3))formation is vital for themanagement of emission reduction and pollution control.Continuousmeasurement of O_(3)and the major precursorswas conducted in a typical light industrial city in the YRD region from 1 May to 25 July in 2021.Alkanes were the most abundant VOC group,contributing to 55.0%of TVOCs concentration(56.43±21.10 ppb).OVOCs,aromatics,halides,alkenes,and alkynes contributed 18.7%,9.6%,9.3%,5.2%and 1.9%,respectively.The observational site shifted from a typical VOC control regime to a mixed regime from May to July,which can be explained by the significant increase of RO_(x)production,resulting in the transition of environment from NOx saturation to radical saturation with respect to O_(3)production.The optimal O_(3)control strategy should be dynamically changed depending on the transition of control regime.Under NOx saturation condition,minimizing the proportion of NOx in reduction could lead to better achievement of O_(3)alleviation.Under mixed control regime,the cut percentage gets the top priority for the effectiveness of O_(3)control.Five VOCs sources were identified:temperature dependent source(28.1%),vehicular exhausts(19.9%),petrochemical industries(7.2%),solvent&gasoline usage(32.3%)and manufacturing industries(12.6%).The increase of temperature and radiation would enhance the evaporation related VOC emissions,resulting in the increase of VOC concentration and the change of RO_(x)circulation.Our results highlight determination of the optimal control strategies for O_(3)pollution in a typical YRD industrial city. 展开更多

Caffeine intake by pregnant women, adults and children can be harmful to the health of all particularly fetuses if the intake exceeds the permissible limits. Therefore, it is of fundamental importance to measure its concentration accurately using certified reference materials (CRMs). In the literature, no scientific details are published about the certification of caffeine standard solutions, and therefore, the present article covers this gap. A batch of caffeine solution was prepared in concentration of 1000 mg/kg and bottled. Homogeneity and stability of the candidate reference material were assessed by HPLC-UV and the results showed that the material is homogenous and stable enough. Characterization of the caffeine reference material was performed by HPLC-UV, LC-MS/MS and UV-VIS-NIR spectrophotometer in three different days and the characterization uncertainty was estimated in accordance with the requirements of ISO GUM. The certified value (999.86 ± 8.57 mg/kg) was derived as a weighted mean from the gravimetry and the three characterization methods and the certified uncertainty was calculated according to ISO Guide 35. The produced CRM is of strong interest to the food and drug analytical laboratories for the validity and credibility of their caffeine measurement results. 展开更多

There is a need for an internationally standardized and psychometrically tested instrument to measure the perceptions of staff members on the quality of forensic inpatient care provided. The aim of the present study was to adapt the Swedish instrument Quality of Psychiatric Care-Forensic In-Patient Staff (QPC-FIPS) to the Danish context and to evaluate its psychometric properties and factor structure in this context. All permanently employed staff members at all 27 forensic inpatient wards in Denmark were invited to answer the Danish version of the QPC-FIPS. In total, 641 staff members participated, resulting in a response rate of 80%. The Danish version of the QPC-FIPS showed adequate psychometric properties and excellent goodness of fit of the hypothesised factor structure. Hence, the Danish QPC-FIPS is an excellent instrument for evaluating quality of forensic inpatient care both in clinical practice and in cross-cultural research. The members of staff generally reported that the care provided to patients was of high quality. The quality of the forensic-specific dimension was rated the highest, followed by the support, secluded environment, encounter, discharge and participation. The quality of the secure environment dimension was perceived to be the worst. The QPC-FIPS includes important aspects of staff members’ assessments of quality of care and offers a simple and inexpensive way to evaluate psychiatric forensic inpatient care. The QPC-FIPS can be used together with the Quality of Psychiatric Care-Forensic In-Patient (QPC-FIP) instrument, which covers the same items and dimensions as the QPC-FIPS, to identify patients’ and staff members’ views on quality of care and to improve the quality of forensic psychiatric care and benchmarking. 展开更多
