Food production and processing of quality food and safe food are today of primary importance. Food production is based on the principles of Good Agricultural Practice (GAP), Good Manufactoring Practice (GMP) and Good Hygiene Practice (GHP). Recently, the industrial food processing is focused dominantly on the quality, and one of the basic requirements of the quality is the safety. There are different methods and techniques to produce safe food. The up-to-date food technologies and quality measurements (quality control and quality assurance) involve the application of different physical methods, e.g., high pressure, pulsing electrical field, nondestructive techniques, e.g., nuclear magnetic resonance (NMR), near infrared reflectance, near infrared transmittance (NIR-NIT), photo acoustic spectroscopy (PAS) and instrumental neutron activation analysis (INAA) for chemical composition determination, radiation techniques, nanofiltration and reverse osmosis (RO) as well. Using ionizing radiation (nuclear methods) and non-ionizing radiation technologies, it is possible to fulfill a lot of expectations: decrease of microbial contamination, improve of sensory properties, increase of storability, etc..展开更多

It was identified as Penicillium oxalicum based on its morphological characteristics and ITS rDNA gene sequence analysis. The effects of carbon source, nitrogen source and the concentration of methamidophos, temperature and pH on the degradation were investigated. The results showed that the strain could use glucose as carbon source and the methamidophos as sole nitrogen source. The degradation ratio of methamidophos, when the initial concentration was 1.0× 10^-3 mg mL^-1, could reach above 99.9% in 12 incubation days. The strain could use ethanol, glucose, fructose, sucrose, lactose, starch, and dextrin as its carbon and energy source to degrade the methamidophos. The favorable degrading condition of the strain ZHJ6 was in a mineral salt medium at pH 5.0 and 25℃ with 1% glucose, and further studies showed that the strain could degrade folimat, phoxim and glyphosate with glucose as carbon source, but could not degrade chlorpyrifos, phosdrin, trichlorphon, and dichlorvos.展开更多

文摘Fructose consumption has risen dramatically in recent decades due to the use of sucrose and high fructose corn syrup in beverages and processed foods, contributing to rising rates of hyperuricemia. The purpose of this experiment was to explore the anti-hyperuricemia effects of an active oligopeptide(GPSGRP)derived from sea cucumber in fructose induced hyperuricemia mouse model, and to clarify the underlying mechanism in sight of gut microbiota and serum metabolites.Peptide GPSGRP treatment rebalanced uric acid metabolism and alleviated inflammatory response in mice.In addition, treatment with GPSGRP decreased the abundance of Bacteroides and Proteobacteria at the phylum level,Muribaculum,Prevotella and Bacteroides at the genus level, and inhibited the related pathways of purine metabolism and glycolysis/gluconeogenesis metabolism. Moreover, serum metabolites, including linoleic acid, indole and its derivatives, arachidonic acid and uridine,as well as related metabolic pathways, such as tricarboxylic acid cycle, ketone production and sugar production, were altered in response to GPSGRP treatment. This study provides a valuable reference for the application and development of marine biological peptides in uric acid management.

文摘Decays resulting from infections by Geotrichum citri-aurantii cause a significant reduction in citrus postharvest quality and marketable yield. In the present work,0.8 mol·L^(-1)NaCl of Generally Recognized as Safe(GRAS)salts were identified to have complete inhibition activity to G.citriaurantii in vitro and in vivo.An inhibitory mechanism study showed that 0.1 mol·L^(-1)NaCl changed the expression of six genes(Gci002087,Gci003354,Gci000013,Gci000394,Gci003505 and Gci004433)in target of rapamycin(TOR)pathway, thus inducing a large number of lipid droplets(LDs)accumulation with TEM observations and staining. In vivo,0.1 mol·L^(-1)NaCl could raise up the activities of CAT,PAL,PPO and cellulase which hence to strengthen the ability of resistance tolerance of citrus. In addition,NaCl not only accelerated the growth of the biocontrol yeast Kloeckera apiculata strain 34-9,but also increased the expression level of adhesin-encoding genes and biofilm-formation encoding gene(34-9-3691).Finally,the storage experiments in 3 months demonstrated that the combination of NaCl and the yeast 34-9 could keep fresh, reduce decay and prolong its shelf-life,thus implying that the combination of biocontrol strain and GRAS salts has been explored as a promising alternative to synthetic fungicides.

文摘AIM:To investigate the efficacy of Eleutherine bulbosa(Mill.)Urb.bulb extract(EBE)on the 3D human retinoblastoma cancer cells(WERI-Rb-1)spheroids and explore its apoptotic mechanism.METHODS:The 3D WERI-Rb-1 and human retinal pigmented epithelium cells(ARPE-19)spheroids were developed using type 1 murine collagen that was excised from the rat tail tendon and cultured via hanging drop and embedded techniques. The cytotoxic activity was examined by Alamar blue assay meanwhile, the morphological characteristics were assessed by 4’,6-diamidino-2-phenylindole(DAPI)and scanning electron microscopy(SEM).The mRNA and protein expressions of apoptotic and antioxidant signal transduction pathways were explored to ascertain its molecular mechanisms. The statistical analysis was carried out using GraphPad Prism.RESULTS:The Alamar blue assay portrayed higher half maximal inhibitory concentration(IC50)values of EBE and cisplatin on 3D WERI-Rb-1 model as compared to the previous study on 2D model. The results of DAPI and SEM illustrated apoptotic features upon treatment with EBE and cisplatin in a dose-dependent manner on 3D WERI-Rb-1 model. The mRNA and protein levels of apoptotic and antioxidant-related pathways were significantly affected by EBE and cisplatin,respectively(P<0.05).The regulation of gene and protein expressions of 3D WERI-Rb-1 spheroids differed from the 2D study, suggesting that the tumor microenvironment of extracellular matrix(ECM)collagen matrix hindered the EBE treatment efficacy, leading to apoptotic evasion.CONCLUSION:A significant inhibition effect of EBE is observed on the 3D WERI-Rb-1 spheroids. The presence of ECM causes an increase in cytotoxic resistance upon treatment with EBE and cisplatin.
文摘This review attempts to delineate the effects and roles of fermented foods on allergic responses(AR),specifically from milk, plant, and meat sources.Evidence for AR alleviation and aggravation were noted for many different fermented food groups.Positive outcomes on AR through fermented foods could be linked to microbial hydrolysis of food allergens, improvement in gut microbiota robustness, and modulation of the immune system that promotes a balance between T helper 1(Th1)and Th2 cells.Studies on plant-based,non-protein rich fermented foods tend to show more favourable results compared to those on meat-based or protein-rich group. The usage of specific and known starter cultures are helpful in alleviating AR,as in the case for many yogurt,Kefir or Dahi products.Sufficient fermentation time was also deemed important, exemplified in studies that showed inefficient AR reduction through consumption of fresh cheese. However, formation of new allergens through fermentation of certain meat-based foods,or by using specific fermenting microbes(e.g.Penicillium sp.),is possible. Thus, combination of starter cultures and food substrates must be considered in preventing or eliminating AR from intake of these foods. This review may aid consumers to make informed decision during the consumption of fermented food.

文摘Meat products are an important part in our daily diet, providing valuable nutrients for the human body. However, heating processes cause the meat to become more appetizing with changes in texture, appearance, flavor, and chemical properties by the altering of protein structure and other ingredients. As one kind of cooking-induced contaminants, heterocyclic aromatic amines(HAAs)are widely present in protein aceous food products with strong carcinogenic and mutagenic properties. In order to promote the safety of traditional meat products, this review focused on the formation, metabolism, biological monitoring and inhibitory mechanism of HAA.An overview of the formation pathways, hazards, and control methods of HAAs during food processing in recent years was studied, aiming to provide some valuable information for exploring effective methods to inhibit the production of associated hazards during food processing.Systematic selection of different types of flavonoids to explore their effects on the formation of HAAs in an actual barbecue system can provide theoretical reference for effectively controlling the formation of HAAs and reducing their harm to human health.

文摘The paper deals with some questions of important aspects of food safety and application of principles of food physics in the food sector. Using ionizing radiation (nuclear methods) and non-ionizing radiation technologies, it is possible to fulfill a lot of expectations: decrease of microbial contamination, improve of sensory properties, increase of storability, etc..

文摘Intestinal microbiota imbalance may worsen the progression of ulcerative colitis(UC).Lacticaseibacillus rhamnosus LS8(LR)has the potential ability to regulate microbiota through producing a novel antibacterial substance, cyclic opine:cycloalanopine. This study aimed to investigate whether LR could ameliorate dextran sulfate sodium-induced UC in mice via modulating intestinal microbiota using fecal microbiota transplantation(FMT)experiment. The results showed that both LR and FMT attenuated UC as evidenced by 1)alleviating disease activity index and colonic pathology;2)up-regulating MUCs and tight junction proteins;3)increasing oxidative mediators and decreasing antioxidant mediators;4)down-regulating proinflammatory cytokines and chemokines. These results were mainly attributable to the microbiota-regulating effect of LR,including increasing beneficial bacteria(like Akkermansia)and its related SCFAs,while decreasing harmful bacteria(like Proteobacteria)and its related LPS,thereby suppressing the hyperactivation of TLR4/NF-κB pathway.Consequently,LR can alleviate UC and is a potential dietary supplement to attenuate UC.

文摘Ergothioneine is a natural amino acid with powerful antioxidant activity.Previous studies have demonstrated that ergothioneine can increase the lifespan of Drosophila melanogaster and Caenorhabditis elegans, and enhance telomerase activity. In present study, the metagenomics sequencing and quantitative real-time polymerase chain reaction analysis were employed to characterize the composition and diversity of gut microbiome in aging flies. And the alterations in the gut barrier, gut morphology, and other gut physiological indicators of aging flies were evaluated. Here, the results showed that ergothioneine induced little variations in gut microbiota composition in flies at mid-life,and significant alterations in the gut microbiota populations were only observed in flies at late-life.And ergothioneine attenuated age-related gut injuries, including decreasing reactive oxygen species levels in intestinal enterocytes, reduction of intestinal cells death, and preservation of gut integrity in aging flies.Ergothioneine also improved the gut morphology by preserving the structure and shape of cell organelles and inducing the intestinal autophagy. And activation of intestinal autophagy also contributed to the longevity effect mediated by ergothioneine in an unidentified mechanism.
文摘In this study, the simple DPPH UV-spectrophotometric analytical procedures were optimized and validated for the estimation of antioxidant properties in aerated, semi-aerated and non-aerated tea products as per the AOAC guidelines. The method was found to be simple, rapid, accurate and economical in estimating antioxidant properties in the different tea products. A (0.0100 ± 0.0001) g well ground tea sample was extracted directly in 80% v/v methanol in distilled water. The precision of the method had an RSD% of 1.695 with a linear relation equation of Y = 200.7X + 5.25 (r2 = 0.997). The method proved to be a reliable and effective tool in analysis of anti-oxidant properties in varied tea cultivars and their processed products.

文摘Aging is a physiological process that leads to degeneration and functional decline of the brain. This is accompanied by intracellular peroxidation and neuronal apoptosis.Natural antioxidants possess a remarkable effect on attenuating the oxidative stress cascade and apoptosis of neurons;however, the challenge of using natural antioxidants for neuroprotection is fabricating a delivery system to overcome the blood-brain barrier(BBB)transport.Herein,we successfully created a stable delivery platform built on rigid ferritin nanocage loading natural lycopene molecules, crossing the BBB in quantity and being taken up in neurons. This nanoparticle worked on D-galactose-induced senescence via alleviating neuronal hyperoxidation injury and weakening neuronal apoptosis in PC12 and BV2 cells.More importantly, this natural delivery system possesses inherent biocompatibility and potential application in improving the bioavailability of bioactive edible compounds with low water solubility. This study demonstrated the effectiveness of natural antioxidant nanomedicines in maintaining the defenses of intracerebral peroxidation and improve degenerating neurons, providing the potential to combat further imbalances of neuronal microenvironment in aging neuropathy.

文摘One methamidophos-degrading fungus strain, named as ZHJ6, was isolated from the soils contaminated with methamidophos. The favorable degrading condition of the strain ZHJ6 was in a mineral salt medium at pH 5.0 and 25℃ with 1% glucose, and further studies showed that the strain could degrade folimat, phoxim and glyphosate with glucose as carbon source, but could not degrade chlorpyrifos, phosdrin, trichlorphon, and dichlorvos.
