Polyphenolic compound in processing apple (Malus domestica Borkh.) varieties and the relationship between polyphenol content and enzymatic browning were studied to provide reference for raw material selection and processing method optimization. The content of polyphenol compound in 10 processing apple varieties (4 cider and 6 juice varieties) were analyzed using the Folin-Ciocalteu method and HPLC. The degree of browning and the activities of polyphenol oxidase were also studied. The content and proportion of the polyphenol varied depending on the variety. Bitter varieties globally showed a higher polyphenol concentration than sweet or acid varieties. Proanthocyanidins, chlorogenic acid, (+)-catechin, (-)-epicatechin were high-concentrated polyphenols in apple fruits. Phloridzin, the unique polyphenol of apple, was abundant in the bitter variety Frequin rouge fruit. Total polyphenols, proanthocyanidins, (+)-catechin, and phloridzin had higher correlations with browning. The correlation was low between chlorogenic acid and browning. The polyphenolic profiles were correlated with the apple types. Cider apples contained more polyphenol than juice apple varieties. The content of flavan-3-ol has a close relationship with fruit browning. 展开更多

Present work was undertaken to screen some drought tolerant indigenous aromatic rice cultivars(IARCs),commonly cultivated in West Bengal,India,based on their capacity to produce osmolytes,redox-sensitive phenolic acids and flavonoids,as contrivances for redox-regulation under drought stress.Polyethylene glycol induced post imbibitional dehydration stress mediated changes in redox regulatory properties of the germinating seeds of the four IARCs(Jamainadu,Tulaipanji,Sitabhog,Badshabhog),which were assessed in terms of changes in prooxidant accumulation(in-situ localization of reactive oxygen species(ROS)by confocal microscopy,DCFDA(2′,7′-dichlorofluorescin diacetate)oxidation,O2-and H2O2 accumulation),cumulative antioxidative defense(radical scavenging property and total thiol content),ROS scavenging phenolic acids(gallic acid,protocatechuic acid,gentisic acid,para-hydroxy benzoic acid,chlorogenic acid,caffeic acid,syringic acid,salicylic acid,sinapic acid and p-coumaric acid)and flavonoids(catechin,naringin,rutin,quercetin,kaempferol,myricetin and apigenin).The capability of germinating seeds to accumulate osmolytes(like glycinebetaine,proline,soluble carbohydrates and K+ion)and polyphenolic compounds was also correlated with their corresponding redox status and redox biomarkers(conjugated diene,hydroperoxide,thiobarbituric acid reactive substances and free carbonyl content)produced under the same conditions.The results in general showed that accumulation of osmolytes along with the redox-sensitive phenolics and flavonoids conferred the ability to maintain the redox homeostasis under drought stress for the tolerant IARCs(Badshabhog and Tulaipanji). 展开更多

To improve the processing quality of potatoes,phosphate buffer extract(PBE),50%ethanol(E50),and aqueous extract(AE)of tartary buckwheat seedlings were evaluated for their ability to inhibit the enzymatic browning of potatoes.The results suggest that all extracts of tartary buckwheat seedlings exert significant inhibitory effects on the polyphenol oxidase(PPO)activity in potatoes.The relative concentrations required for a 50%reduction in the PPO activity(IC50)were 0.21,0.28 and 0.41 mg mL^-1,for PBE,E50 and AE,respectively.The strongest inhibitory activity was observed for PBE,followed by E50 and AE.Four flavone compounds in the PBE of tartary buckwheat seedlings(i.e.,rutin,kaempferol-3-O-rutinoside,quercetin,and kaempferol)were identified by high-performance liquid chromatography.These compounds were subsequently evaluated for their roles in the inhibition of PPO from potatoes using a model system.The results indicated that rutin exhibited the highest inhibition rate on the PPO of potato.A synergistic inhibitory effect was observed by mixing rutin,kaempferol-3-Orutinoside,quercetin,and proteins.The inhibitory patterns of rutin,kaempferol-3-O-rutinoside,and quercetin on the enzyme were noncompetitive and reversible,with inhibitory constants of 0.12,0.31,and 0.40 mg mL^-1,respectively.Flavonoids from tartary buckwheat seedlings may exhibit a common mechanism with phenolic compounds,involving the blockage of the reaction of oxygen with PPO leading to the inhibition of the enzymes involved in browning.Based on these results,extracts of tartary buckwheat seedlings can be used as potent natural inhibitors. 展开更多

Objective:To evaluate the antioxidant and radical scavenging activities of Solanum anguivi fruit(SAG)and its possible effect on mitochondrial permeability transition pore as well as mitochondrial membrane potential(△Ψ_m)isolated from rat liver.Methods:Antioxidant activity of SAG was assayed by using 2,2-diphenyl-1-picrylhydrazyl(DPPH),reducing power,iron chelation and ability to inhibit lipid peroxidation in both liver and brain homogenate of rats.Also,the effect of SAG on mitochondrial membrane potential and mitochondrial swelling were determined.Identification and quantification of bioactive polyphenolics was done by HPLC-DAD.Results:SAG exhibited potent and concentration dependent free radical-scavenging activity(IC_(50)/DPPH=275.03±7.8μg/mL).Reductive and iron chelation abilities also increase with increase in SAG concentration.SAG also inhibited peroxidation of cerebral and hepatic lipids subjected to iron oxidative assault.SAG protected against Ca^(2+)(110μmol/L)-induced mitochondrial swelling and maintained the△Ψ_m.HPLC analysis revealed the presence of gallic acid[(17.54±0.04)mg/g],chlorogenic acid(21.90±0.02 mg/g),caffeic acid(16.64±0.01 mg/g).rutin[(14.71±0.03)mg/g]and quercetin[(7.39±0.05)mg/g].Conclusions:These effects could be attributed to the bioactive polyphenolic compounds present in the extract.Our results suggest that SAG extract is a potential source of natural antioxidants that may be used not only in pharmaceutical and food industry but also in the treatment of diseases associated with oxidative stress. 展开更多

Objective: Anabasis aretioides (Coss & Moq.), a Saharan plant belonging to Chenopodiaceae family, is widely distributed in semi-desert areas from the Tafilalet region of Morocco. This plant is extensively used by local population against diabetes and cardiovascular disorders. The purpose of the study was to investigate the effect of the aqueous A. aretioides extract on lipid metabolism in normal and strepto-zotocin (STZ)-induced diabetic rats and to identify the polyphenolic compounds present. In addition, the in vitro antioxidant activity of the aqueous A. aretioides extract was also evaluated. Methods: The effect of an aerial part aqueous extract (APAE) ofA. aretioides (5 mg/kg of lyophilized A. are-tioides APAE) on plasma lipid profile was investigated in normal and STZ-induced diabetic rats (n = 6) after once daily oral administration for 15 days. The aqueous extract was tested for its 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging activity. Polyphenolic compounds in the extracts were defini-tively characterized by high-performance liquid chromatography-diode array detection-electrospray ionization-mass spectrometry. Results: In diabetic rats, oral administration ofA. aretioides APAE provoked a significant decrease in both plasma cholesterol and triglyceride levels from the first to the second week (P 〈 0.01). A significant decrease on plasma triglyceride levels was also observed in normal rats (P 〈 0.01), where the reduction was 53%. In addition, the phytochemical analysis revealed the presence of 12 polyphenolic compounds. Moreover, according to the DPPH radical-scavenging activity, the aqueous extract showed an in vitro antioxidant activity. Conclusion: Aqueous A. aretioides APAE exhibits lipid-lowering and in vitro antioxidant activities. Many polyphenols were present in this extract and these phytoconstituents may be involved in the pharmaco-logical activity of this plant. 展开更多

The design of experiment (DoE) was conducted to evaluate the influence of acetone concentration % (v/v), solid-to solvent ratio % (w/v), temperature (&#730C) and extraction time (min) and their interaction on phenolic contents, using the Central Composite Rotatable Design (CCRD). The experimental data were analysed to fit statistical models for recovery of phenolic compounds. The selected models were significant (P 0.05), except for Chlorogenic acid and Quercetin 3-glucoside which had significant lack of fits (P R2 > 0.9000 and adjusted? ?reasonable agrees with predicted . Coefficient of variation < 5% for each determination at the 95% confidence interval. These models could be relied upon to achieve optimal concentrations of polyphenolic compounds for applications in nutraceutical, pharmaceutical and cosmetic industries. 展开更多

目的探究天然多酚类化合物Malabaricone A通过调控ANXA2/P38信号通路抑制胶质瘤细胞增殖的分子机制。方法使用13种天然多酚类化合物处理胶质瘤细胞。RNA-Seq检测Malabaricone A处理胶质瘤细胞后基因表达及通路变化。RT-qPCR检测ANXA2、G... 目的探究天然多酚类化合物Malabaricone A通过调控ANXA2/P38信号通路抑制胶质瘤细胞增殖的分子机制。方法使用13种天然多酚类化合物处理胶质瘤细胞。RNA-Seq检测Malabaricone A处理胶质瘤细胞后基因表达及通路变化。RT-qPCR检测ANXA2、GCOM1、SPP1、FSBP、C4A、TIMP1、LRRC37A、BPIFB1、GOLGA8R和CDH5的mRNA水平的表达。TCGA数据库分析ANXA2在胶质瘤中的表达及与预后的关系。MTT法和平板克隆法检测胶质瘤细胞的增殖活力。Western blot法检测胶质瘤细胞中ANXA2、P38-MAPK和p-P38-MAPK蛋白水平的表达。结果在13种天然多酚类化合物中,Malabaricone A的杀伤效果最好且对人神经星形胶质细胞的毒性最低。RNA-seq结果显示,经Malabaricone A处理后细胞中ANXA2的mRNA和蛋白水平均显著下降(P<0.01)。TCGA数据库结果显示,ANXA2在胶质瘤中低表达(P<0.01)且与预后呈现明显的负相关(P=0.02)。KEGG通路分析显示,Malabaricone A能抑制胶质瘤细胞中P38信号通路(P<0.01)。过表达ANXA2能促进胶质瘤细胞的增殖。敲除ANXA2后,Malabaricone A对胶质瘤细胞的杀伤作用变弱且不能显著抑制P38信号通路(P<0.05)。结论天然多酚类化合物Malabaricone A通过调控ANXA2/P38信号通路抑制胶质瘤细胞的增殖。 展开更多

[目的]探究茶多酚-牛磺酸复合添加剂对肉牛生长性能、瘤胃发酵参数、血清生化指标及抗氧化能力的影响,为新型绿色饲料添加剂在肉牛养殖中的应用提供参考。[方法]选取120头12月龄、体重相近且健康状况良好的西门塔尔杂交肉牛,采用完全随机设计分为4组,每组设3个重复,每个重复10头。对照组(CON组)仅饲喂基础日粮,试验Ⅰ、Ⅱ、Ⅲ组则在基础日粮中分别添加200、400、600 mg/kg的茶多酚-牛磺酸复合添加剂(茶多酚与牛磺酸配比为1∶1)。试验周期包含15 d预试期与60 d正试期。预试期结束时测定正试期初体重,正试期间每日记录采食量,正试期结束时测定正试期末体重、采集瘤胃液测定瘤胃发酵参数、采集血清测定生化指标及抗氧化指标。[结果]生长性能方面,与CON组相比,试验Ⅱ组和试验Ⅲ组肉牛的平均日增重显著(P<0.05)提升,料重比显著(P<0.05)下降,试验Ⅰ组各项指标与对照组无显著差异(P>0.05);瘤胃发酵参数方面,与对照组相比,试验Ⅱ组和试验Ⅲ组瘤胃内乙酸、丙酸、丁酸含量及总挥发性脂肪酸含量显著(P<0.05)升高,氨态氮含量显著(P<0.05)降低,且试验Ⅱ组效果优于试验Ⅲ组;血清生化指标方面,血清中总蛋白、白蛋白含量随复合添加剂添加量的增加呈先升后降趋势,试验Ⅱ组显著(P<0.05)高于其他组,尿素氮含量显著(P<0.05)降低;血清抗氧化能力方面,与对照组和试验Ⅰ组相比,试验Ⅱ组、试验Ⅲ组血清中超氧化物歧化酶、谷胱甘肽过氧化物酶活性及总抗氧化能力显著(P<0.05)提升,丙二醛含量显著(P<0.05)下降,试验Ⅱ组各项抗氧化指标均优于试验Ⅰ组和试验Ⅲ组。[结论]在该试验条件下,基础日粮中添加400 mg/kg茶多酚-牛磺酸复合添加剂(茶多酚∶牛磺酸=1∶1),可显著改善肉牛生长性能,优化瘤胃发酵模式,提升血清生化指标水平及机体抗氧化能力,是适用于肉牛养殖的高效绿色饲料添加剂。 展开更多

目的:探讨儿童乳牙慢性根尖周炎的有效治疗方法。方法:采用回顾性研究方法,选取我院2022年10月至2024年10月治疗的92例乳牙慢性根尖周炎患儿,根据治疗方案分为对照组45例(采用氢氧化钙糊剂根管填充治疗)和观察组47例(采用复方茶多酚含... 目的:探讨儿童乳牙慢性根尖周炎的有效治疗方法。方法:采用回顾性研究方法,选取我院2022年10月至2024年10月治疗的92例乳牙慢性根尖周炎患儿,根据治疗方案分为对照组45例(采用氢氧化钙糊剂根管填充治疗)和观察组47例(采用复方茶多酚含漱液联合氢氧化钙糊剂根管填充治疗),比较两组疗效。结果:观察组总有效率为93.62%,高于对照组的77.78%(P<0.05)。治疗7 d后,观察组患儿牙龈红肿、疼痛、叩痛评分及牙齿松动程度均低于对照组(P<0.05)。治疗7 d后,观察组血清白细胞介素-18(IL-18)、超敏C反应蛋白(hs-CRP)水平均低于对照组(P<0.05)。结论:复方茶多酚含漱液联合氢氧化钙糊剂根管填充治疗乳牙慢性根尖周炎患儿疗效显著,可明显缓解疼痛,降低牙齿松动程度,减轻炎症反应。 展开更多

Objective: To determinate the recovery of total polyphenolic compounds content,in vitro antioxidant activity and HPLC/ESI/MS characterization of extract from Nephelium lappaceum L.(Mexican rambutan).Methods: The rambutan husk extract was obtained by aqueous extraction and a polyphenolic fraction was recovered using Amberlite XAD-16. The total polyphenolic compounds content was determined by the Folin Ciocalteu and butanol-HCI methods.In vitro antioxidant activity was performed using ABTS and ferric reducing antioxidant power methods.Results: Mexican rambutan husk showed a total polyphenolic content of 582 mg/g and an evident antioxidant activity by ABTS and ferric reducing antioxidant power analysis.The HPLC/ESI/MS assay allowed the identification of 13 compounds, most of which belong to ellagitannins. Geraniin, corilagin and ellagic acid were present in the sample;the mineral composition was also evaluated.Conclusions: Rambutan husk cultivated in Mexico is a promising source for the recovery of added value bioactive compounds with antioxidant activity, which have potential applications as bioactive antioxidant agents for the treatment of diseases. 展开更多

The objective of this research was investigated the effect of polyphenol oxidase microwave treatment on phenolic composition, antioxidant activity and microstructure of loquat fruit. Phenolic profile of methanolic extracts prepared from fresh, and microwave-treated samples were analyzed. Antioxidant activity was also evaluated by 2,2’-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS?+) and 1,1-diphenyl-2-picrylhydrazyl (DPPH+) methods. In addition, polyphenol oxidase inactivation was carried out using a response surface methodology to establish the optimal conditions of treatment. The phenolic content of fresh mesocarp was 311 ± 0.60 mg gallic acid equivalents (GAE)/100g dry weight (DW) and that of microwave-treated mesocarp was 1230 ± 0.36 mg GAE/100g DW. Total phenolic content of water/ methanol extract significantly increases after microwave treatment rather than methanolic extract of fresh loquat. Five glycoside phenolics were identified by HPLC-DAD-MS as 3-caffeoylquinic acid, 3-p-coumaroylquinic acid, 5-caffeoylquinic acid and quercetin-3-O-sambubioside. Methanolic extract of microwave-treated mesocarp showed higher antioxidant activity than that of fresh mesocarp. Thus, polyphenol oxidase inactivation by microwave energy preserved the integrity of phenolic compounds as well as antioxidant activity in mesocarp extracts prepared from loquat fruit. It was also noted that phenolics were more abundant in the microwaved samples than in the fresh samples. 展开更多

为探究复合菌种发酵枸杞酸奶的生物活性物质含量、体外抗氧化能力的变化及引起变化的原因,对比研究了嗜热链球菌,嗜热链球菌和保加利亚乳杆菌(3:1),嗜热链球菌和植物乳植杆菌(1:1),嗜热链球菌和副干酪乳杆菌(1:1),嗜热链球菌、保加利亚... 为探究复合菌种发酵枸杞酸奶的生物活性物质含量、体外抗氧化能力的变化及引起变化的原因,对比研究了嗜热链球菌,嗜热链球菌和保加利亚乳杆菌(3:1),嗜热链球菌和植物乳植杆菌(1:1),嗜热链球菌和副干酪乳杆菌(1:1),嗜热链球菌、保加利亚乳杆菌和植物乳植杆菌(2:1:2),嗜热链球菌、保加利亚乳杆菌和副干酪乳杆菌(2:1:2)复配发酵的枸杞酸奶。结果表明:复合菌种发酵提高了样品中多酚、黄酮的含量,降低了类胡萝卜素、多糖的含量。与其他样品相比,由嗜热链球菌、保加利亚乳杆菌和副干酪乳杆菌以2:1:2比例发酵的枸杞酸奶样品(SL-Lpc)的活菌数最高,类胡萝卜素、多糖含量无显著变化(P>0.05),多酚与黄酮含量分别提高了16.05%和14.97%,其DPPH自由基清除率、羟基自由基清除率和ABTS+自由基清除率分别可达96.33%、84.83%和98.37%,抗氧化能力显著高于其它样品(P<0.05)。相关性分析发现多酚类化合物(含黄酮)与体外抗氧化活性呈显著正相关。进一步探究发现发酵前后16种酚酸类差异代谢物(10种上调,6种下调)和12种黄酮类差异代谢物(9种上调,3种下调)发生了变化。多种酚酸类物质的上调和糖苷类黄酮的生成是发酵后抗氧化活性提升的主要原因。该研究为枸杞益生菌酸奶的开发提供参考。 展开更多

Improving Oxidative Stability of Polyphenolic Fraction of Apple Pomace by Encapsulation Using Naturally Occurring Polymers

Polyphenolic compounds with relatively high antioxidant activity obtained from subcritical water extraction of apple pomace were assessed for encapsulation by spray drying technique, making use of polymeric substances co-extracted with the polyphenolic compounds. Comparative assessments were carried out of the directly encapsulated subcritical water extract (SWE) products with particles formed when encapsulated with the addition of hydroxyl propyl-β-Cyclodextrin (SWE + HPβ-CD). The powders were characterized for their physico-chemical properties such as, moisture content, density, particle size, hygroscopicity to assess their suitability within cosmetic formulations. The SWE and SWE + HPβ-CD encapsulated products resulted in different physical properties. Although the particle size was less than 4 μm for both products, the direct encapsulation (SWE) was highly hygroscopic and this property was significantly reduced with addition of HPβ-Cyclodextrin (SWE + HPβ-CD). Scanning electron microscopy (SEM) and Fourier Transform Infrared (FT-IR) spectroscopic were em-ployed to analyse the micronised powders to support evidence of encapsulation. Both techniques revealed the interaction between compounds in extract and the carrier HPβ-Cyclodextrin suggesting successful encapsulation. The effect of storage conditions on retention of antioxidant activity of the subcritical water extract was evaluated within 35 days for extracts with and without the carrier HPβ-Cyclodextrin. Hydroxyl propyl-β-Cyclodextrin offered protection against degradation of antioxidant compounds thereby potentially extending the shelf-life and making the encapsulated powder suitable for incorporation in cosmetic and pharmaceutical applications. 展开更多

Natural Compound Formula RM88 Significantly Reduces Blood Alcohol Concentration in Humans

Abuse of alcohol causes substantial personal, psychological and medical health issues. In addition, there are significant national economic costs from lost productivity. However, there are limited pharmaceutical drugs for the treatment of alcohol overuse. Historically, many cultures have used herbs and other natural compounds to reduce problematic alcohol induced behaviour but the evidence is anecdotal. This study investigated if a natural compound formula (RM88) that was developed could reduce blood alcohol concentration (BAC) in a controlled case series. Thirteen subjects (5 males, 8 females, age range 18 to 85 years) completed 16 paired sessions of alcohol only versus RM88 with alcohol. Subjects consumed one to three standard drinks of beer, wine or spirits (14.7 to 29.4 gm alcohol). Measurements were made by a fuel cell breathalyzer for a period of 90 minutes. Summated BAC showed a reduction in 94% (15/16) of paired test sessions (BAC reduction range 23% - 79%, mean 50.9% ± 16.5%, p = 0.0005). Data normalized to 20 gm alcohol (two standard drinks) showed a significance of p = 0.00026. One subject on prednisone and hydroxychloroquine drugs had increased BAC from RM88. To explore the mechanism of hypolipidemic action of wolfberry polyphenols by using network pharmacology and molecular docking.The active ingredients and targets of wolfberry were searched by TCMSP,and the Cytoscape 3.9.0 software was used to construct a“wolfberry component-target”network.The Gene Cards database was used to screen the hyperlipidemic targets and intersect them with the active targets of wolfberry to construct the PPI network using the STRING platform.The gene ontology(GO)function and Kyoto encyclopedia of genes and genomes(KEGG)pathway enrichment analysis of the core targets were carried out on the Metascape platform,and molecular docking of the active ingredients to the core targets was performed using AutoDockTools software.A total of 33 active ingredients and 173 potential targets of wolfberry were screened,including 99 targets related to hyperlipidemia.The results of the analysis of 99 intersecting targets with the components of wolfberry identified the core active ingredients as quercetin,glycitein and atropine.The binding of the major components of wolfberry,including the polyphenolic compounds quercetin and glycitein,as well as atropine to the key targets AKT1,IL6 and TNF may be important mechanisms for the hypolipidemic therapeutic effect.GO functional enrichment analysis involves biological processes,cellular components,and molecular functions.The KEGG pathway enrichment analysis mainly involves the AGE-RAGE signaling pathway,fluid shear stress,and TNF signaling pathway.Molecular docking validated the good binding activity of the targets to the active ingredients.The binding of atropine and the polyphenolic compounds quercetin and glycitein to the key targets AKT1,IL6 and TNF may be an important mechanism for the hypolipidemic therapeutic effect of wolfberry. 展开更多

背景:脊髓损伤是一种严重的神经系统疾病,常导致神经功能严重受损。在脊髓损伤后的病理过程中,氧化应激是一个重要环节,导致神经细胞死亡和功能丧失。近年来,天然产物因来源广泛、结构多样且生物活性丰富,逐渐在脊髓损伤后的氧化应激治... 背景:脊髓损伤是一种严重的神经系统疾病,常导致神经功能严重受损。在脊髓损伤后的病理过程中,氧化应激是一个重要环节,导致神经细胞死亡和功能丧失。近年来,天然产物因来源广泛、结构多样且生物活性丰富,逐渐在脊髓损伤后的氧化应激治疗中展现出潜在的应用价值。目的:讨论部分天然产物在脊髓损伤后氧化应激过程中的治疗作用以及相关作用机制,以期为脊髓损伤的抗氧化治疗提供新的思路和方向。方法:以“spinal cord injury,oxidative stress,anti-oxidation,natural products,natural compounds,polyphenols”“脊髓损伤,氧化应激,抗氧化,天然产物,天然化合物,多酚”为关键词,在PubMed、Web of Science、Embase、Cochrane、维普、CBM、万方和中国知网数据库检索自建库以来至2024年5月的相关文献。制定纳入和排除标准,通过阅读文献标题、摘要及全文内容进行筛选,最终纳入97篇相关文献。结果与结论:①天然产物如多酚类等可以依靠其结构中的酚羟基发挥直接清除氧化自由基的作用,减轻脊髓损伤后的氧化应激反应;②一些天然产物可以通过调控某些信号转导通路增强体内相关抗氧化酶的活性,减轻氧化应激;③部分天然产物可以通过增强自噬的方式减弱脊髓损伤后的氧化应激;④利用天然产物调控氧化应激可能成为今后临床上治疗脊髓损伤的有效工具。 展开更多

以宁夏贺兰山东麓产区赤霞珠和马瑟兰葡萄为研究对象,跟踪分析酒精发酵和苹果酸-乳酸发酵前后的风味物质,找出主要风味物质的变化规律;采用液相色谱技术分析了12种有机酸和18种单体酚含量,采用固相微萃取偶联气相色谱串联质谱技术结合... 以宁夏贺兰山东麓产区赤霞珠和马瑟兰葡萄为研究对象,跟踪分析酒精发酵和苹果酸-乳酸发酵前后的风味物质,找出主要风味物质的变化规律;采用液相色谱技术分析了12种有机酸和18种单体酚含量,采用固相微萃取偶联气相色谱串联质谱技术结合阈值分析,解析了挥发性香气物质。结果显示:酒精发酵是葡萄酒风味物质生成的主要阶段,苹乳发酵对风味物质具有辅助修饰作用;赤霞珠和马瑟兰葡萄酒发酵过程中酒石酸、苹果酸、柠檬酸含量呈下降趋势,而乳酸、琥珀酸、奎宁酸和乙酸含量呈增加趋势;单体酚含量随着酒精发酵和苹乳发酵进程呈增长趋势,其中儿茶素和表儿茶素是最主要成分;共鉴定出86种挥发性物质,其中28种香气活性值大于1;酯类和醇类是重要挥发性组分,主要在酒精发酵过程中产生,苹乳发酵后赤霞珠含量上升,而马瑟兰含量略下降;C_(13)-降异戊二烯类和酸类等在酒精发酵后和苹果酸-乳酸发酵后含量逐步增长。赤霞珠和马瑟兰葡萄酒风味物质含量存在差异,研究结果为产区品种选择和葡萄酒风格特点提升提供了基础数据。 展开更多
