In this study,the peanut peptide-selenium complex(PP-Se)was prepared and its structure,stability and anti-oxidant properties were thoroughly investigated.Structural characterization by^(1)H Nuclear Magnetic Resonance(...In this study,the peanut peptide-selenium complex(PP-Se)was prepared and its structure,stability and anti-oxidant properties were thoroughly investigated.Structural characterization by^(1)H Nuclear Magnetic Resonance(^(1)H NMR)spectroscopy,scanning electron microscopy(SEM),and atomic force microscopy(AFM)indicated that PP-Se is a novel complex that is different from peanut peptide(PP),in which the carboxyl and aminogroups of PP participate in the binding with SeO_(3)^(2-).PP-Se exhibited excellent stability under various conditions,including high temperature,acidic and alkaline environments,and alcohol solubility,and maintained a high selenium retention rate(>80%)during simulated gastrointestinal digestion.Antioxidant analysis showed that when the sample concentration was 10.0 mg/mL,compared with PP,the scavenging rate of 2,2′-Azino-bis(3-ethyl-benzothiazoline-6-sulfonic acid)(ABTS)radicals,hydroxyl radicals and superoxide anion of PP-Se increased by 7.53%,57.60%and 41.12%,respectively,and the reducing power increased by 15.79%.In the HepG2 cell model with oxidative damage,PP-Se with the concentration of 75~125μg/mL showed low cytotoxicity(cell viability>90%)and effectively alleviated oxidative stress.Sample(100μg/mL)of PP-Se significantly reduced lactate dehydrogenase(LDH)release and malondialdehyde(MDA)content,while enhancing superoxide dismutase(SOD)and catalase(CAT)activities.This study provides a theoretical basis for the high-value utilization of peanut meal and the development of novel selenium supplements.展开更多
