There are data on commonly consumed vegetables, but information is sparse on nutritional, chemical and anti-nutritional properties of less explored vegetables. This work aimed to evaluate some attributes of less explored or underutilized leafy vegetables. Some nutritional and anti-nutritional contents of 10 under-utilized leafy vegetables(Amaranthus spinosus Linnaeus, Basella alba Linnaeus, Corchorous tridens L., Cyrtosperma senegalense(Schott), Erigeron floribundus Sch, Hoslundia opposita Vahl, Lagenaria siceraria(Molina) Standl, Ocimum basilicum L., Solanum aethiopicum L. and Talinum portulacifolium(Forssk.) Asch. ex Schweinf) were investigated. Cyrtosperma senegalense had the highest protein value(5.93%). Hoslundia opposita had the highest fat content(0.54%). Amaranthus spinosus was high in β-carotene content(346.3 mg · 100 g-1); Cyrtosperma senegalense had the highest moisture content. A. spinosus had the highest ascorbic acid content(108.1 mg · 100 g-1). The highest tannin level(0.0057%) was found in C. senegalense and the lowest(0.0003%) was found in Solanum aethiopicum. Saponin was the highest in C. tridens(0.0052%) and the lowest in T. portulacifolium(0.00014%). C. senegalense and S. aethiopicum had their highest and the lowest phytate values, respectively. Although anti-nutrients could interfere with nutrient utilization, their values in these vegetables were not at toxic levels.展开更多

In this study, a total of six aromatic and two non-aromatic rice accessions grown in India were analysed for their nutritional quality attributes including proximate composition, mineral contents and fatty acids. Data with three replications were used to measure Pearson's simple correlation co-efficient in order to establish the relationship among various nutritional quality attributes. The result on proximate composition showed that Govind Bhog had the highest moisture(13.57%) and fat(0.92%) content, which signifies its tasty attribute. Badshah Bhog exhibited the highest fibre content(0.85%), carbohydrate content(82.70%) and food energy(365.23 k Cal per 100 g). Among the minerals, the higher Ca(98.75 mg/kg), Zn(17.00 mg/kg) and Fe(31.50 mg/kg) were in Gopal Bhog, whereas the highest Na(68.85 mg/kg) was in Badshah Bhog, the highest K(500.00 mg/kg) was in Swetganga, Khushboo and Sarbati. The highest contents of unsaturated fatty acids viz. oleic acid(49.14%), linoleic acid(46.99%) and linolenic acid(1.27%) were found in Sarbati, whereas the highest content of saturated fatty acids viz. myristic acid(4.60%) and palmitic acid(31.91%) were found in Govind Bhog and stearic acid(6.47%) in Todal. The identified aromatic rice accessions Gopal Bhog, Govind Bhog and Badshah Bhog and non-aromatic rice accession Sarbati were found nutritionally superior among all eight tested accessions. The nutritional quality oriented attributes in this study were competent with recognized prominent aromatic and non-aromatic rice accessions as an index of their nutritional worth and recommend to farmers and consumers which may be graded as export quality rice with good unique nutritional values in international market.展开更多
Postharvest Chinese olives are prone to quality deterioration,spoilage,and decay,which lead to postharvest loss and shorten the shelf life of fresh Chinese olives.Slightly acidic electrolyzed water(SAEW)is an economic...Postharvest Chinese olives are prone to quality deterioration,spoilage,and decay,which lead to postharvest loss and shorten the shelf life of fresh Chinese olives.Slightly acidic electrolyzed water(SAEW)is an economical,safe,and environmentally friendly postharvest technology for fresh produce.The effects of SAEW at 40 mg/L available chlorine concentration(ACC)on the storage behaviour and quality performance of Chinese olives were explored.In contrast with the control sample,SAEW-treated Chinese olives presented a lower pericarp greenness(-)-redness(+)(a^(*))value,a lower percentage of fruit weight loss,a lower fruit respiration rate,a higher percentage of healthy fruit,and higher values of pericarp lightness(L^(*)),blueness(-)-yellowness(+)(b^(*)),chroma(C),and hue angle(h°).Additionally,SAEW treatment helped delay the declines in the levels of pericarp chlorophyll,pulp sucrose,total soluble solids,titratable acid,vitamin C,and total soluble sugars,as well as reduce the increases in pericarp carotenoid and pulp-reducing sugar.These data suggest that SAEW treatment could efficaciously elevate the storage performance and quality maintenance of postharvest Chinese olives,thereby lengthening the storage life of fresh Chinese olives.展开更多
