[ Method] The effects of outdoor rearing, indoor rearing and cage rea ring modes on the muscular histological traits and meat tenderness of Hetian chicken at the age of 8 weeks, 12 weeks and 16 weeks were re searched. [Result] The results showed that the breast and thigh muscle fibre diameter and muscle shear force of outdoor rearing chicken were sig nificently higher than that of cage rearing chicken ( P 〈 0.05), and muscle fibre density was significantly lower than that of cage rearing chicken ( P 〈 0.05). With aging, the muscle fibre diameter and shear force increased and muscle fibre density decreased ( P 〈 0.05). The muscle fibre di ameter and shear force of male were higher than that of female. The correlation analysis showed that the breast muscle shear force had a signifi cantly positive relation with fibre diameter and negative relation with fibre density ( P 〈 0.05), but thigh muscle shear force had an insignificantly pos itive relation with fibre diameter and fibre density. [ Condusion] Muscular histological traits varied in different rearing modes, and the outdoor rearing promoted the muscular fibre development and increased the muscular shear force. 展开更多

[Methed] The diameter and density of muscle fiber of three local varieties of chicken (Beijing Fatty broil- er, Fujian Hetian broiler and Taining Black broiler) were detected at the age of 8 weeks, 12 weeks and 16 weeks. And the differences in the diame- ter and density of muscle fiber as well as their relationship with meat tenderness were respectively analyzed with SAS software. [ Resultl Fatty broil- er had the smallest muscle fiber diameter while Hetian broiler the largest; Fatty broiler had the highest muscle fiber density while Hetian broiler the lowest Hetian broiler had the highest muscle shear force of leg muscle while Black broiler the lowest ( P 〈0.05) ; Black broiler had the highest mus- cle shear force of breast muscle while Fatty broiler the lowest (P〈0.05). The correlation analysis showed that the shear force of breast muscle and leg muscle had significantly positive relation with fiber diameter and significantly negative relation with fiber density ( P 〈 0.05). LIM domain proteins are found to be important regulators in cell growth, cell fate determination, cell differentiation, and remodelling of the cell cytoskeleton by their interaction with some structural proteins, kinases, transcriptional regulators, etc. The presence of LIM domains in LMCD1 gene implies it may be involved in skeletal muscle protein-protein interactions. This study was to investigate polymorphisms of LIM and cysteine-rich domain 1 (LMCD1) gene and its effect on meat quality and carcass traits in pig. The polymorphism (G294A) in exon 3 region of porcine LMCD1 gene, which is synonymous mutation, was genotyped in the population of 178 F, pigs of a Large White × Meishan resource family. Statistical results indicated the distribution of allele G (with a A → G mutation) and A (without mutation). Analysis of variance showed that the polymorphism of LMCD1 gene was associated with variation in several carcass traits of interest for pig breeding. Some carcass traits and meat quality traits are close to significance by association. An analysis of more animals is necessary to analyze the polymorphisms in exon 3 of porcine LMCD1 gene if it was selected as a marker for the pig carcass traits. 展开更多

And the application effect of Berkshire in the minority areas was analyzed. [Result] From the carcass traits, the hybridized pig of Berkshire(B) x Landrace(L) ×Yorkshire(Y) had higher slaughter rate and lower lean meat percentage, having extremely significant difference with Landrace (L) × Yorkshire (Y) and significant difference with Durec (D) × Landrace (L) × Yorkshire(Y). The meat indices of Berkshire(B) × Landrace(L) ×Yorkshire(Y) were better than that of Landrace (L) ×Yorkshire(Y) and Duroc (D)× Landrace(L) ×Yorkshire(Y). [Objective]The paper was to compare the slaughter performance and meat flavor of quality chicken under cage rearing and free-range farming conditions.[Method]A total of 4001-day-old cocks,S07 line cultivated by Sichuan Dahen Poultry Breeding Co.,Ltd.(bred for 4 succes-sive generations),were kept in cages until the end of 5 weeks of age,which were then divided into cage rearing and free-range farming groups.All cocks were fed with the same diet,and slaughter tests and meat quality analysis were carried out at the end of 10 and 22 weeks of age,respectively.[Result]The live weight,carcass weight and abdominal fat percentage in cage rearing group were significantly higher than those in free-range farming group(P<0.01),and the percentage of half-eviscerated yield and percentage of eviscerated yield in cage rearing group were significantly higher than those in free-range farming group(P<0.05),but there were no significant differences in dressing percentage,percentage of leg muscle and per-centage of breast muscle.The intramuscular fat(IMF)content and muscle fiber density of chicken in cage rearing group were significantly higher than those in free-range farming group(P<0.01),but there was no significant difference in inosinic acid(IMP)content.The content of IMF and IMF increased with the increase of feeding age,but the deposition rate of intramuscular fat was higher than that of IMF in late feeding period.[Conclusion]The study will provide reliable guidance for production and market consumption of high quality chicken. 展开更多

Correlation between Histological Traits and Meat Quality in Taihu Geese

[ Result] The goose was either female or male. The muscle fiber density and muscle fiber diameter of breast muscle were significantly higher than those of leg muscle ( P 〈 0.01 ). The muscle fiber density had negative correlation with muscle fiber diameter, muscle fiber gap and muscle bundle gap, and the correlation coefficients were -0.808, -0.540 and -0.620, respectively. The muscle fiber diameter had positive correlation with the muscle bundle gap and their correlation coefficient was 0.546. The muscle fiber density had a significant positive correlation with pH value and water holding capacity (P 〈 0.05). The muscle fiber diameter and muscle fiber gap had a significant negative correlation with pH value (P 〈 0.05). This study was conducted with the objective to determine carcass traits, meat yield, and primal meat cuts of Arsi, Harar, Jersey*Horro crossbred, and Ogaden cattle breeds at Haramaya University, Ethiopia. A total of 12 bulls of four cattle breeds (3 Arsi, 3 Harar, 3 F1 Jersey*Horro crossbred and 3 Ogaden) with almost similar ages were randomly assigned to four treatments in a completely randomised design (CRD). Data on carcass traits, meat yield, and primal meat cuts were analyzed using the General Linear Model (GLM) of the Statistical Analysis Software (SAS) 9.4 version. The overall averages of live body weight, hot carcass weight, chilled carcass weight, dressing percentages based on hot carcass weight, and rib eye area of experimental cattle breeds were 215.58 kg, 102.93 kg, 99.56 kg, 47.61%, and 8.13 inch<sup>2</sup>, respectively. The hot carcass weight and chilled carcass weight of the Ogaden (136.57;133.30 kg, resp.) breed were higher (p < 0.01) compared to other experimental cattle breeds. Dressing percentages based on hot carcass weight were higher (p < 0.05) for the Ogaden (49.61%) and Arsi (49.82%) cattle breeds compared to Harar and Jersey*Horro crossbred (45.73%, 45.27%, resp.) cattle breeds. The average meat yield and proportion of meat yield of cattle breeds were 77.52 kg and 77.46%, respectively. With a linear regression coefficient of prediction (R<sup>2</sup>) ranging from 52.26% to 93.58%, primal meat cuts significantly (p dicted meat yield. In conclusion, the breed of cattle had a significant (p 0.05) influence on live body weight, hot and chilled carcass weight, dressing percentage, rib eye area, subcutaneous fat thickness, meat yield, and the weights of most primal meat cuts. The Ogaden cattle breed had a higher and better meat yield, carcass traits, and most primal meat cuts compared to other experimental cattle breeds. Furthermore, the inclusion of corn silage in the diet of fattening bulls improved the carcass and meat yield. Therefore, the performance of Ogaden cattle compared to other and previous studies suggests the possibility of using this breed for export purposes in addition to Borana and Harar cattle breeds in the future. 展开更多

[目的]研究液态饲喂发酵酱酒糟和谷物酒糟糖浆梯度替代日粮对杜长大育肥猪生长性能、胴体性状及肉品质的影响,旨在为将其高效、安全地应用于生猪养殖提供数据支持和实践方案。[方法]选80头健康的“杜×长×大”阉割育肥猪随机分为2组,每组包含4个重复(即4个独立的饲养单元),每个重复10头猪。试验周期77 d,分前期(1~49 d)和后期(50~77 d)两阶段实施梯度替代饲喂:对照组2个时期均使用基础日粮,前期试验组用6%发酵酱酒糟+6%谷物酒糟糖浆等量替代基础饲粮,后期替代比例调整为9%发酵酱酒糟+8%谷物酒糟糖浆,全程采用液态饲喂系统。试验结束后测定杜长大育肥猪生长性能指标、胴体性状指标、器官指数及肉品质指标。[结果]与对照组相比,试验组在试验全期的平均日增重显著(P<0.05)升高,料重比极显著(P<0.01)下降;试验组的油脂率显著(P<0.05)升高,瘦肉率显著(P<0.05)下降,眼肌面积极显著(P<0.01)下降,其余胴体性状无显著差异(P>0.05);试验组器官指数、肉品质均无显著差异(P>0.05)。[结论]在该试验条件下,采用梯度比例发酵酱酒糟与谷物酒糟糖浆替代基础饲粮对杜长大育肥猪的生长性能、胴体性状、器官指数以及肉品质的影响均无负面影响,且可改善育肥猪的生长性能,但需注意瘦肉率下降的问题。 展开更多

Comparison between the Quality Traits of Phosphate and Bicarbonate-Marinated Chicken Breast Fillets Cooked under Different Heat Treatments 被引量:1

Because the use of phosphates has being recently diminished in meat industry due to the nutritional drawbacks of phosphates, some researchers started to evaluate sodium bicarbonate as phosphate replacer in meat products. The aim of this study was to evaluate the effect of different temperature combinations of dry air-cooking treatments (Air and Core temperatures: 160 - 76, 160 - 80, 200 - 76 and 200℃ - 80℃, respectively) on chemical composition, texture properties, water activity, freezable water and bound water, color, pH, and water binding capacity of phosphate and bicarbonate-marinated chicken breast. A batch of 24 h post-mortem broiler breast meat of 80 fillets was divided into two groups of marination treatments (0.3% sodium bicarbonate n = 40, 0.3% sodium tripolyphosphate n = 40) and was vacuum tumbled (45 min, ?0.95 mbar, 20 rpm). Different temperature-combinations cooking treatments significantly modified the chemical composition. Bicarbonate marinated fillets showed higher ability to retain water (67.3% vs. 65.7%, P 0.05) during severe heat treatment and lower cook losses (30.7% vs. 33.4%, P 0.05) when compared with phosphate-marinated fillets. The effect of changing the cooking temperatures on Texture Profile Analysis (hardness, cohesiveness, gumminess, springiness, and chewiness) was more tangible in phosphate marinated fillets than bicarbonate. Bicarbonate-marinated fillets showed significant differences in the percentage of bound water, latent heat, and water activity after cooking in comparison to phosphate-marinated fillets. The results of this study revealed that phosphate-marinated fillets interacted with heat treatments in different patterns in comparison with bicarbonate-marinated fillets. 展开更多

本研究旨在分析性别、批次对渝州白鹅生长和饲料效率性状及剩余采食量(RFI)估计的影响。对2022—2023年单笼饲养的5个批次试验鹅1925只(公鹅938只、母鹅987只),测定个体6、8、10周龄体重并计算7~8周龄、9~10周龄、7~10周龄平均日增重(A... 本研究旨在分析性别、批次对渝州白鹅生长和饲料效率性状及剩余采食量(RFI)估计的影响。对2022—2023年单笼饲养的5个批次试验鹅1925只(公鹅938只、母鹅987只),测定个体6、8、10周龄体重并计算7~8周龄、9~10周龄、7~10周龄平均日增重(ADG)、平均日采食量(ADFI)和饲料转化比(FCR),比较不同性别、批次间性能差异。分别估计单批次单性别、单批次双性别、多批次单性别和多批次双性别以及是否将性别、批次作为固定效应的不同条件下的7~10周龄RFI,并以RFI估计模型的调整决定系数(R^(2))为指标比较不同条件下RFI估计准确性差异。结果显示:性别、批次及其交互效应几乎对所有性状有显著或极显著影响(P<0.05或P<0.01),9~10周龄ADG、ADFI和FCR的平均性别差异为7~8周龄的1.21、1.06和1.93倍,批次间呈现不同生长模式。单批次单性别RFI估计显示,5个批次的调整R^(2)均值为公鹅0.431、母鹅0.424,而单批次双性别RFI(校正性别)的调整R^(2)均值为0.625,表明考虑性别效应可提升RFI估计准确性,但不同批次提升幅度差异较大;合并使用多批次数据(校正批次)后,公、母鹅RFI的调整R^(2)分别为0.533和0.574,RFI估计准确性明显高于单批次单性别;进一步合并使用多批次双性别数据后,校正性别、校正批次及二者同时校正条件下RFI的调整R^(2)分别为0.556、0.633和0.663。综上所述,渝州白鹅FCR的性别差异在上市前显著增大;利用单批次双性别RFI选种的准确性、时效性好,但存在批次间波动,使用多批次双性别RFI选种可进一步提高准确性并避免批次差异,但费时费力。 展开更多

旨在筛选影响莱芜猪滴水损失的关键基因,以提高猪肉质品质并减少滴水带来的经济损失。本研究选取胴体重为(72.30±1.26)kg的28头莱芜猪(公猪19头,母猪9头),测定48 h滴水损失、肉色、肌内脂肪含量和pH等肉质性状,并进行背最长肌组织... 旨在筛选影响莱芜猪滴水损失的关键基因,以提高猪肉质品质并减少滴水带来的经济损失。本研究选取胴体重为(72.30±1.26)kg的28头莱芜猪(公猪19头,母猪9头),测定48 h滴水损失、肉色、肌内脂肪含量和pH等肉质性状,并进行背最长肌组织的转录组测序。利用滴水损失极端个体(每组各3头公猪,1头母猪),在log 2(差异倍数)≥1且校正后P≤0.01的筛选标准下,筛选差异表达基因。结合差异基因与表型的相关分析和蛋白互作分析进一步鉴别影响莱芜猪滴水损失的关键候选基因。结果发现,莱芜猪滴水损失与肌内脂肪含量以及1 h和24 h肉色a*值呈显著负相关(P<0.05)。滴水损失高、低组间共筛选到166个差异表达基因,这些基因显著富集在与血管系统发育与功能、细胞骨架与运动、蛋白质调控与功能等相关的GO条目和通路中。在28个个体中的相关性分析发现,差异表达基因中有110个基因与滴水损失呈显著相关(P<0.05),前10位显著相关的差异表达基因包含了KLF 2和IGF 2等功能上与滴水损失密切相关的基因。进一步的蛋白互作分析发现,差异表达基因中UBR 1和TTBK 2所表达的蛋白与其它蛋白存在最多的互作,其基因mRNA表达量与滴水损失显著相关(P<0.05),且已报道的基因功能也与滴水损失密切相关。因此,结合差异表达基因分析、相关性分析和蛋白互作分析将KLF2、IGF2、UBR 1和TTBK 2作为影响滴水损失的重要候选基因。本研究为猪滴水损失分子机制的解析奠定基础,也为猪肉质性状改良提供了重要借鉴。 展开更多

为探究槟榔江公水牛和德宏公水牛的肉品质及开发利用其肉用价值,分别选取(33±3)月龄的槟榔江公水牛(BLJ组)和德宏公水牛(DH组)各10头,在相同饲养管理条件下,每头补饲精料3 kg/d,自由采食全株玉米青贮,预实验期10 d,正式实验期90 d... 为探究槟榔江公水牛和德宏公水牛的肉品质及开发利用其肉用价值,分别选取(33±3)月龄的槟榔江公水牛(BLJ组)和德宏公水牛(DH组)各10头,在相同饲养管理条件下,每头补饲精料3 kg/d,自由采食全株玉米青贮,预实验期10 d,正式实验期90 d。结果表明:BLJ组的背最长肌和股二头肌肉色亮度值、红度值、黄度值均明显高于DH组,眼肌面积极显著高于DH组(P<0.01)。在饱和脂肪酸中,BLJ组背最长肌C17:0、C18:0相对含量极显著高于DH组(P<0.01),C16:0相对含量显著低于DH组(P<0.05);BLJ组股二头肌中C18:0相对含量极显著高于DH组(P<0.01),C17:0显著高于DH组(P<0.05);多不饱和脂肪酸中,BLJ组股二头肌和背最长肌中C22:4 n-6相对含量极显著高于DH组(P<0.01),背最长肌中C20:4 n-6和C22:5 n-6相对含量显著高于DH组(P<0.05)。BLJ组背最长肌中易引发高胆固醇血症的多不饱和脂肪酸相对含量显著低于DH组(P<0.05);BLJ组的股二头肌胆固醇含量显著高于背最长肌(P<0.05),其背最长肌胆固醇含量极显著低于DH组(P<0.01)。综上,槟榔江水牛眼肌面积更大,肉色鲜红明亮,2种牛肉胆固醇含量较低,肌肉脂肪酸组成合理,均为优质脂肪酸肉类。 展开更多

本试验旨在探究上市日龄前琅琊鸡剩余采食量(RFI)与生长及饲料效率性状、屠宰性能和肉品质的相关性。选用478只体重相近且有系谱记录的健康琅琊鸡,在相同饲养环境中进行单笼饲养,试验期自96日龄时开始至133日龄结束,共37 d。试验开始前... 本试验旨在探究上市日龄前琅琊鸡剩余采食量(RFI)与生长及饲料效率性状、屠宰性能和肉品质的相关性。选用478只体重相近且有系谱记录的健康琅琊鸡,在相同饲养环境中进行单笼饲养,试验期自96日龄时开始至133日龄结束,共37 d。试验开始前、结束后均停料12 h后称个体重量(空腹),获得每个个体96日龄体重(BW96)、133日龄体重(BW133)、总采食量(FI),计算96~133日龄RFI、平均日增重(ADG)、平均日采食量(ADFI)、饲料转化率(FCR),并进行遗传参数估计。根据RFI和全同胞家系信息,挑选出高、低RFI极端个体各22只,试验结束后进行屠宰性能和肉品质测定;对2组试验鸡的生长及饲料效率性状、屠宰性能和肉品质性状进行分析。结果显示:基于个体动物模型,ADFI和RFI属于中等遗传力,其中ADFI的遗传力最高,为0.25,RFI次之,为0.24。高RFI组琅琊鸡的ADFI和FCR均极显著高于低RFI组(P<0.01),高、低RFI组琅琊鸡的ADG无显著差异(P>0.05)。琅琊鸡的RFI与ADFI、FCR呈极显著正相关(P<0.01)。低RFI组琅琊鸡的屠宰率、全净膛率极显著高于高RFI组(P<0.01);高RFI组琅琊鸡的腹脂率极显著高于低RFI组(P<0.01)。琅琊鸡的RFI与屠宰率呈极显著负相关(P<0.01),与全净膛率、胸肌率呈显著负相关(P<0.05),与腹脂率呈极显著正相关(P<0.01)。高RFI组琅琊鸡的胸肌pH、腿肌pH极显著高于低RFI组(P<0.01);低RFI组琅琊鸡的胸肌肉色亮度(L^(*))值显著高于高RFI组(P<0.05);高RFI组琅琊鸡的胸肌肉色红度(a^(*))值极显著高于低RFI组(P<0.01)。琅琊鸡的RFI与胸肌pH、腿肌pH、胸肌肉色a^(*)值呈极显著正相关(P<0.01),与胸肌肉色L^(*)值呈极显著负相关(P<0.01)。综上可知,琅琊鸡96~133日龄RFI为中等遗传力,以低RFI为选育指标可以提高上市日龄前期琅琊鸡的饲料利用效率且不影响生长性能;对低RFI的选择可提高琅琊鸡的屠宰性能,减少脂肪沉积,并在一定程度上改善肉品质。 展开更多

试验旨在探究牛至精油替代抗生素对生长育肥猪生长性能、腹泻率、胴体性状及肉品质的影响。选取80头体重为(40.44±1.66)kg的三元杂交生长育肥猪80头,随机分为4组,每组20个重复,每个重复1头猪。对照组(CK组)饲喂基础饲粮;抗生素组(A... 试验旨在探究牛至精油替代抗生素对生长育肥猪生长性能、腹泻率、胴体性状及肉品质的影响。选取80头体重为(40.44±1.66)kg的三元杂交生长育肥猪80头,随机分为4组,每组20个重复,每个重复1头猪。对照组(CK组)饲喂基础饲粮;抗生素组(A1组)在基础饲粮中添加70 mg/kg金霉素;牛至精油组在基础饲粮中分别添加250(A2组)和500 mg/kg牛至精油(A3组)。预试期7 d,正式试验期90 d。结果表明,与CK组相比,A1组、A2组和A3组的末重与平均日增重显著提高(P<0.05),料重比显著降低(P<0.05);A3组的腹泻率显著降低(P<0.05)。与CK组相比,A1组、A2组和A3组的宰前活重与胴体重显著提高(P<0.05),A3组的屠宰率和腿肌中总氨基酸含量显著提高(P<0.05)。研究表明,饲粮中添加牛至精油可以提高生长育肥猪的生长性能、胴体性状和腿肌中总氨基酸含量,降低腹泻率,改善肉品质和风味,且500 mg/kg牛至精油的添加效果优于抗生素,可达到替代抗生素的作用。 展开更多
