Food safety is an on-going priority,and fresh meat is easily susceptible to quality deterioration due to physical,chemical or microbiological factors throughout the supply chain.Many conventional detection methods are destructive,time-consuming,and require highly controlled environment and making it difficult to monitor the quality of meat in real-time with precision.This paper reviews and summarizes the intelligent detection technology(bionic technology,spectral technology,electromagnetic characteristics technology,biosensor technology,intelligent film and intelligent packaging technology)of fresh meat and its applications.Intelligent detection technology can detect the freshness and adulteration of meat by characterizing key meat quality indicators such as biogenic amines,total volatile base nitrogen,microbial colony count,etc.Due to the advantages of non-destructive,portable,fast,accurate,and low-cost,intelligent detection has the potential for widespread application.As composite materials and cross-domain detection technology continue to evolve and advance,the increasing development of intelligent detection methods is poised to overcome the limitations of conventional detection technology,and is expected to play an increasingly role in accurately identifying the quality degradation of meat products. 展开更多
