Those works have proved the hypothesis of author that local ingredients and dishes represent minimum role on menus. The question is how similar or different the choice of menus of Budapest-Middle-Danube compared with the previously examined areas of Hungary. There can be another question about the usage of local ingredients available near to the catering units. This piece of work has studied 79 menus of Budapest-Middle-Danube, Hungary. The material was collected from different types of restaurants, small restaurants (vendeglo in Hungarian) and roadside restaurants (csarda in Hungarian). The method of the work was on the one hand, data collecting, and on the other hand, examination of the differences between the catering units in details: the number of dishes, the right order of dishes, the appearance of local ingredients and dishes, the consideration of seasonality, the usage of different cooking methods and group of dishes. The study reflects the main problems of countryside restaurants in Hungary. Only minimum number of dishes could be connected to local dishes out of more than thousands. All in all, dishes are not as precise and perfect as the "old ones", so that is why it is important for every expert keep the traditions alive in daily routines and strategic mean too.展开更多

En- vironment and natural resources are the cornerstone of tourism, but are also subject to the negative impact of tourism. Based on the theory and methodology of ecological footprint analysis, this paper calculated the touristic ecological footprint and deficit of Macao in 2009, in an effort to bring to light the current status of excessive consumption of resources by tourism. As the findings show, the non-h'ansferable touristic ecological footprint and touristic ecologi- cal deficit of Macao in 2009 are respectively 18 300.891 gha and 12 737.584 gha, and the former is 3.29 times as large as the tour- istic ecological carrying capacity. Touristic ecological footprint of Macao is highly efficient in economic sense but currently tourism is developing in an unsustainable manner, so appropriate initiatives are in need to strike a balance between tourism development and resource conservation and to promote the sustainability of tourism industry of Macao.展开更多

Recent research on dark tourism has raised the possibility that people are attracted to death and memorial sites in ways different from other tourist attractions. The study used an empirical research design employing questionnaires to collect data from 255 Chinese domestic visitors at seismic memorial sites in west Sichuan. Analysis revealed that the obligation of commemoration mixed with curiosity represents a different set of travel motivation in dark tourism settings than in other kinds of tourism. In addition, the empirical evidence also suggests an interrelated pattern between motivations, experiences and benefits. This study implies that Chinese domestic tourists were attracted in ways different from other tourist attractions both because they tended to fulfill their obligation of commemoration and were interested in destruction; and visitor experiences played an important mediating role between travel motivations and benefits gained.展开更多
