The volatile flavor... The aim of the present study is to investigate the effects of Monascus fermentation on the aroma pattern of semi-dried grass carp. Semi-dried fish was fermented using Monascus purpureus GDMCC3.439. The volatile flavor substances present in fresh fish, semi-dry fish and Monascus fermented semi-dried fish were compared by simultaneous distillation and extraction combined with gas chromatograph-mass spectrometer (GC-MS). The results showed that alcohols, aldehydes and ketones were the main components of the flavor of the unfermented and fermented semi-dried grass crap. Monascus fermentation could significantly affect the volatile flavor substances of semi-dried grass carp. Moreover, the processing of semi-dried fish fermented by Monascus could not only effectively improve the fishy smell of fresh fish, but also make up for the defect of the pickled flavor of semi-dried fish. Eighteen of the main volatile components in semi-dried fish fermented by Monascus were identified by relative odor activity value (ROAV), as follows: 1-octene-3-ol, phenylethanol, hexanal, heptanal, nonanal, (E)-2-octenal, 3-Methyl-1-butanal, benzaldehyde, (E)-2-nonenal, (E,E)-2,4-heptadienal, (E)-2-Decenal, phenylacetaldehyde, (E,E)-2.4-decadienal, tetradecanal, 2,3-butanone, 2,3-octanedione, alpha-pinene, 2-pentane furan. 展开更多

Improving the quality of semi-dried noodles by sourdough fermentation:effects on microbial stability,water migration,and cooking properties

Semi-dried noodles are susceptible to microbial spoilage during storage,and conventional preservation methods often rely on chemical additives.This study evaluated sourdough fermentation as a natural strategy to extend shelf-life and improve quality in semi-dried noodles.Two sourdoughs,Lactiplantibacillus plantarum(LP)and LV1,were incorporated at different levels and their effects on microbial stability,water migration,and cooking properties were investigated.Microbial analysis showed that adding 15%LP or LV1 sourdough extended the shelf-life of semi-dried noodles from 6 days to 24 or 27 days,respectively.Physicochemical properties indicated that sourdough fermentation produced lactic and acetic acids,which decreased pH and water activity(aw),thereby inhibiting microbial growth during storage.Low-field nuclear magnetic resonance(LF-NMR)analysis revealed that sourdough fermentation shortened the transverse relaxation time(T2),indicating reduced water mobility that contributed to shelf-life extension.In addition,the incorporation of sourdough enhanced the viscoelastic properties of semi-dried noodle dough and improved its gas production and retention capacity.The 15%sourdough addition significantly shortened the optimal cooking time(OCT)by accelerating moisture migration during cooking and reducing cooking loss.Texture and tensile analysis demonstrated that moderate sourdough levels produced a softer and more elastic noodle texture,while confocal laser scanning microscopy(CLSM)showed that moderate fermentation effectively improved the microstructure of the gluten network.These results indicate that sourdough fermentation provides an effective clean-label approach for producing high-quality semi-dried noodles with extended shelf-life. 展开更多

This investigation aimed to assess the impact of cold plasma(CP)and ultra-high-pressure(UHP)treatment on the quality,flavor,and safety of semi-dried golden pompanos during the storage period.The results showed the highest severity of lipid oxidation in the CP group,whereas alternation in protein structure and protein oxidation were the most apparent in the UHP group.Compared with CP,UHP better inhibited the accumulation of total volatile basic nitrogen and biogenic amines.The shelf life of samples was prolonged by 10-12 and 12-17 days upon treatment with CP and UHP,respectively.Furthermore,the freshness preservation effect of UHP was su-perior.Compared with CP,UHP better mitigated the loss of free amino acids and showed the best inhibitory effect on the production of bad odor-producing compounds,such as 3-methyl-butanal,2,3-butanediol,acetic acid,and trimethylamine. 展开更多

Retrogradation of semi-dry rice noodles severely reduced their eating quality during storage.Three commonly used modified starches(oxidized starch,acetylated starch,and hydroxypropyl starch)were applied to investigate the anti-retrogradation effects of semi-dry rice noodles during cold storage.Loss of water content,migration of water,and increase in relative crystallinity,retrogradation enthalpy,and hardness could be retarded by adding chemically modified starches,especially hydroxypropyl starches.The effect of hydroxypropyl starch addition levels(2%,4%,6%,8%,and 10%)on the properties of rice flour and the edible quality of semi-dry rice noodles was further evaluated.The water solubility index of rice flour decreased with the addition of hydroxypropyl starch,while the swelling power showed the opposite trend.The quality of semi-dry rice noodles were improved with the addition of hydroxypropyl starch.Compared to the control,semi-dried rice noodles with 8%hydroxypropyl starch possessed superior properties,i.e.lower cooking loss(decreasing from 12.89%to 6.62%),lower adhesiveness(decreasing from 5.40 to 4.31 g·s),and higher hardness(rising from 10.89 to 13.81 N).These findings demonstrated that the incorporation of hydroxypropyl starch is a promising strategy for the preparation of semi-dry rice noodles with satisfactory cooking and edible qualities as well as a long shelf life. 展开更多

With the vigorous development of China's iron and steel industry and the introduction of ultra-low emission policies,the emission of pollutants such as SO_(2)and NO x has received unprecedented attention.Considering the increase of the proportion of semi-dry desulfurization technology in the desulfurization process,several semi-dry desulphurization technologies such as flue gas circulating fluidized bed(CFB),dense flow absorber(DFA)and spray drying absorption(SDA)are briefly summarized.Moreover,a method for simultaneous treatment of SO_(2)and NOx in sintering/pelletizing flue gas by O_(3)oxidation combined with semidry method is introduced.Meantime,the effects of key parameters such as O_(3)/NO molar ratio,Ca SO_(3),SO_(2),reaction temperature,Ca/(S+2 N)molar ratio,droplet size and approach to adiabatic saturation temperature(AAST)on denitrification and desulfurization are analyzed.Furthermore,the reaction mechanism of denitrification and desulfurization is further elucidated.Finally,the advantages and development prospects of the new technology are proposed. 展开更多

Based on the demand of sintering/pelleting flue gas ultra-low emission,a semi-dry method using a spray dryer absorber (SDA) combined with O3 oxidation was proposed for simultaneous removal of SO2 and NO.Effects of O3 injection site,O3/NO molar ratio,and spray tower temperature on the removal efficiencies were investigated.It was revealed that both desulfurization and denitrification efficiencies could reach to 85%under the conditions of setting O3 injection site inside of tower,O3/NO molar ratio 1.8,spray tower temperature 85°C,Ca/(S+2N) molar ratio 2.5 and slurry flow rate 300 m L/hr.CaSO3/Ca(OH)2 mixture slurry was used as absorbent to simulate operating conditions in iron and steel industry.The result shows that the addition of CaSO3 weakens both removal efficiencies.In addition,the reaction mechanism of simultaneous removal of SO2 and NO using SDA combined with O3 oxidation was proposed. 展开更多

High-quality rice flour is the foundation for the production of various rice-based products.Milling is an essential step in obtaining rice flour,during which significant changes occur in the physicochemical and quality characteristics of the flour.Although rice flour obtained through mainstream wet milling methods exhibits superior quality,low production efficiency and wastewater discharge limit the development of the industry.Dry milling,on the other hand,conserves water resources,but adversely affects flour performance due to excessive heat generation.As an emerging powder-making technique,semi-dry milling offers a promising solution by enhancing flour quality and reducing environmental impact.This is achieved by minimizing soaking time through hot air treatment while reducing mechanical energy consumption to reach saturated water absorption levels.However,continuous production remains a challenge.This comprehensive review summarizes the effects of various milling technologies on rice flour properties and product qualities.It also discusses key control indicators and technical considerations for rice flour processing equipment and processes. 展开更多

The low-temperature wet oxidation behavior of semi-dry desulfurization ash from iron ore sintering flue gas in ammonium citrate solution was investigated for efficiently utilizing the low-quality desulfurization ash.The effects of the ammonium citrate concentration,oxidation temperature,solid/liquid ratio,and oxidation time on the wet oxidation behavior of desulfurization ash were studied.Simultaneously,the oxidation mechanism of desulfurization ash was revealed by means of X-ray diffraction,Zeta electric resistance,and X-ray photoelectron spectroscopy(XPS)analysis.Under the optimal conditions with ammonium citrate,the oxidation ratio of CaSO_(3)was up to the maximum value(98.49%),while that of CaSO_(3)was only 8.92%without ammonium citrate.Zeta electric resistance and XPS results indicate that the dissolution process of CaSO_(3)could be significantly promoted by complexation derived from the ammonium citrate hydrolysis.As a result,the oxidation process of CaSO_(3)was transformed from particle oxidation to SO_(3)^(2−)ion oxidation,realizing the rapid transformation of desulfurization ash from CaSO_(3)to CaSO_(4)at low temperature.It provides a reference for the application of semi-dry desulfurization ash and contributes to sustainable management for semi-dry desulfurization ash. 展开更多

The mechanical property of a novel expanded polystyrene cement-based material (EPS-C), which was prepared by compressing semi-dry materials molding, was investigated. The compressive behavior was analyzed by compression tests to gain the energy absorbed during failure. Performance for impact resistance was tested by a self-made device. The results figures out that the EPS-C has good toughness and can reach swain of 0.7 without failure. The stress-strain curve is quite different from that of normal EPS concrete. It can be divided into three stages and in the third stage the compressing exhibits the highest energy absorption. With the rising of cement ratio, the impact force absorption (IEA) decreases first and then increases. The impact energy absorption (IEA) increases first and then decreases. The lowest IEA and the highest lEA appear at the cement dosage from 233 g/L to 267 g/L and from 233 g/L to 300 g/L, respectively. 展开更多

The CRS discharge can produce many OH radicals that promote NO oxidation. Combining NaOH absorption can achieve high deSO2 and deNO, efficiencies. It is fit for the reconstruction of primary wet flue gas desulfurization (WFGD). In addition, using NaClO2 as additive in the absorbent of WFGD can obtain very high removal efficiency of SO2 and NOx. 展开更多

If the original dust removal system is transformed into a dry process, it covers a large area, has a high investment and a long construction period.
