In this study,oleaster seed hydrolysates(OSH)were prepared using different enzymes(Alcalase,trypsin,pancreatin,and pepsin).As a result,OSH generated by Alcalase was chosen for microencapsulation because it displayed t...In this study,oleaster seed hydrolysates(OSH)were prepared using different enzymes(Alcalase,trypsin,pancreatin,and pepsin).As a result,OSH generated by Alcalase was chosen for microencapsulation because it displayed the highest nutritional,biological,techno-functional,and antibacterial activities.The impact of spray-drying encapsulation using various biopolymeric carriers(Maltodextrin(MD),combination of MD with gum Arabic(GA),whey protein concentrate(WPC),and Pectin(P))was then assessed in terms of production yield,physicochemical,functional,and morphological characteristics of the encapsulated OSH.Among the spray-dried samples,the powders produced by MD-WPC had the highest yield(57.40%),lowest hygroscopicity(26.03%),proper radical scavenging for DPPH^(-)(82.8%)and ABTS^(+)(90.7%),and selected to incorporate into the pan-breads.Indices such as texture,volume,porosity,antioxidant activity,and color(crust and crumb)of breads were affected by the amount of added peptide.Finally,the microencapsulation of peptides in the carrier matrix(3%SD-powders)had a significant effect on bitterness masking of these compounds,maintaining the quality characteristics and sensory perception of pan-breads.The results of this study can be used to produce functional food formulations.展开更多
There has recently been a fundamental need to develop high efficiency microwave absorbers to reduce electro-magnet-ic pollution.It is often very difficult to obtain superior absorption with only one material,so we hav...There has recently been a fundamental need to develop high efficiency microwave absorbers to reduce electro-magnet-ic pollution.It is often very difficult to obtain superior absorption with only one material,so we have explored composites using fillers of activated carbon derived from biological material(oleaster seeds)and resin(apricot tree gum)with Fe_(3)O_(4) in a paraffin wax matrix to improve the dielectric properties and achieve a high specific surface area.A 1 mm thick layer of a Fe_(3)O_(4)+resin(FEOR),with the magnetic nanoparticles anchored to the gum,resulted in a reflection loss of−71.09 dB.We compared this with the results for composites using a filler of Fe_(3)O_(4)+activated carbon,and one with a three-component filler of Fe_(3)O_(4)+activated carbon+resin which had a very porous structure that had a direct effect on the surface polarization.However,the FEOR sample had near-ideal im-pedance matching,close to 1,which resulted in high absorption performance.In addition,the presence of defects improves mi-crowave attenuation by dipole polarization and charge carrier trapping.This work suggests the use of new types of biomaterials to in-crease microwave absorption.展开更多

Little is known on the genetic relationships between the olive crop and oleaster trees in Tunisia. Fifty-two oleaster trees and fifteen cultivars were sampled from Tunisia. SSR genotyping was performed in polyacrylamide gels after fluorescent labeling. We used seven nuclear and two chloroplast SSR markers. AFC analyses showed close genetic relationships between cultivated and oleaster trees. Genetic relationships were also displayed in a dendrogram based on Unweighted Pair Group Method (UPGMA). Five clusters were defined mixing cultivar and oleaster trees suggesting close relationship between some cultivar and some oleaster trees. One oleaster is single in a cluster. The chlorotype SSR markers show probably three olive origins. Some cultivars have the CE chlorotype originates from the East of the Mediterranean basin, the CCK haplotype originates from Maghreb and the COM chlorotype originates from West Mediterranean. The cultivars were 1) introduced from the East;2) selected in the West;3) or selected in the North Africa region. The Tunisian oleaster trees carry eastern and western Mediterranean chlorotype CCK, COM and CE.展开更多
