Zein/pectin/sodium caseinate composite nanoparticles(Z/P/S NPs)were prepared using reverse solvent precipitation and electrostatic adsorption to deliver flavonoids from loquat flower(FLF).The nanoparticles were spherical in shape,with an average particle size of 132.95±0.45 nm and an entrapment rate of 89.10%±0.76%.Structural analysis suggested that FLF/Z/P/S NPs were mainly formed through hydrogen bonding,hydro-phobic and electrostatic interactions.The fluorescence intensity and secondary structure of the protein were significantly changed after modification,resulting in better stability and redispersibility of FLF/Z/P/S NPs.Meanwhile,FLF/Z/P/S NPs exhibited a significant sustained-release effect in simulated gastrointestinal fluids.The uptake of FLF/Z/P/S NPs by Caco-2 cells was significantly higher than that of FLF,and FLF/Z/P/S NPs had a better absorption effect and could inhibit the effect of extracellular excretion.This study constructed a stable nanoparticle delivery system that could effectively encapsulate and sustain FLF release while improving its absorption efficiency.It provides a method for the efficient utilization of loquat flower flavonoids and offers reference for stability research of other active substances. 展开更多
