The object of this research was to analyze formalin that contaminated in seafood and frozen meat. The method was to select samples at Kalasin Province. The samples were mackerel, crisp squid, frozen chicken, Saba fish, Shishamo fish, Jelly fish, Cockle, Clams, Squid, shrimp, White shrimp and Dolly fish, respectively. The methods were to analyze formaldehyde with titration and formalin test kit. Titration method used formic acid by excess of iodine in alkaline solution. Formalin test kit?of Ministry of Public Health issued Act No.151 (B.E.2536) was to test formalin contaminated food.?The results found formaldehyde in mackerel, crisp squid, frozen chicken, Saba fish, Shishamo fish, jelly fish, cockle, clams, squid, shrimp, white shrimp and dolly fish in three replicated were 288 mg/L, 228 mg/L, 293 mg/L, 77 mg/L, 282 mg/L, 180 mg/L, 120 mg/L, 48 mg/L, 229 mg/L, 294 mg/L, 295 mg/L and 293 mg/L, respectively. Formalin test kit was to found all samples were contaminated with formalin. Moreover, the height formalin contaminated in white shrimp, the second were shrimp and dolly fish, the third was frozen chicken, the fourth was mackerel, the fifth was Shishamo fish, the sixth was squid, the seventh was crisp squid, the eighth was jelly fish, the ninth was cockle, the tenth was Saba fish and the last was clam. The World Health Organization classified formaldehyde was carcinogenic to humans, considerately that there was a decent proof for inflicting cavity cancer in humans.展开更多

利用CiteSpace和文献计量分析平台对冻藏肉制品安全性和稳定性研究的文献进行可视化分析。以万方数据知识服务平台(万方)和Web of Science(WOS)核心合集为数据采集平台,时间跨度2013—2023年,以“冻藏肉”和“Frozen meat”为检索关键词...利用CiteSpace和文献计量分析平台对冻藏肉制品安全性和稳定性研究的文献进行可视化分析。以万方数据知识服务平台(万方)和Web of Science(WOS)核心合集为数据采集平台,时间跨度2013—2023年,以“冻藏肉”和“Frozen meat”为检索关键词,共收集万方数据库中1532篇文献,WOS数据库中4856篇文献。通过对年发文量、刊载期刊、发文国家、发文机构、发文作者及关键词进行分析,揭示冻藏肉制品研究领域的发展趋势。结果表明,冻藏肉制品领域的累计发文量总体呈上升趋势。在国家层面,中国发文量达1537篇,居全球首位;美国以603篇发文量紧随其后,排名第2。在机构层面,国内发文量以上海海洋大学最多,而在全球范围内,中国农业农村部依托各大高校开展研究,发文量最多,占全球机构发文量的2.3%。在作者层面,Sun Dawen、Kong Baohua发文量均高于160篇,不仅深入探讨了冻藏肉制品的安全性和稳定性,还提出了一系列创新性的理论和方法,推动了该领域的快速发展。关键词统计分析结果表明,“劣变机制”“贮藏机理”等是近年来冻藏肉制品领域的研究热点,反映了当前冻藏肉制品研究中亟待解决的问题和挑战,也为未来研究方向提供了重要参考,吸引了更多学者和机构的关注和投入。展开更多

文摘目的 建立基于长短期记忆(longshort-termmemory,LSTM)神经网络的时间序列预测模型,对北京地区鲜(冻)肉制品铅含量进行风险评估与预测预警。方法 通过收集2011—2020年国家市场监督管理总局日常食品监督管理抽检数据,筛选出北京地区鲜(冻)肉制品的抽检数据,构建数据集并进行预处理,按照7:2:1的比例划分训练集、验证集和测试集,基于Tensorflow平台构建4层LSTM模型并进行训练,基于重大活动举办前10d的鲜(冻)肉制品铅含量数据,对未来1d的鲜(冻)肉制品铅含量风险进行预测。结果 经过50轮模型迭代训练,训练集和测试集Loss指标收敛至0.084,经过5次训练后的模型评估参数均方根误差(root mean square error,RMSE)为0.192,决定系数(coefficient of determination,R2_score)为0.916,模型误差较小、准确度较高。结论 基于LSTM的鲜(冻)肉制品铅含量风险预测模型整体性能较好,可应用于重大活动举办地的食品风险预测,并精准指导监督抽检。
