Development of a Functional Food Snack Product Utilizing Underexplored and Underutilized Ingredients: Spirulina Microalgae and Bilberry

Spirulina, a protein-rich cyanobacterium, and Bilberry, a dark berry, have the potential to be used as functional food ingredients in the food industry. These two underexplored and underutilized ingredients were used to develop an adolescent-friendly functional snack food product in the light of food industry trends. Stages of product development, shelf life/physiochemical analysis (texture, pH, color, and water activity) and sensory evaluation were utilized in developing a functional snack mini muffin containing Spirulina and Bilberry. Aqueous (AQ) and 80% ethanol (ET) extracts of mini muffin formulations (chocolate, 1% Spirulina (S) + 4% Bilberry (B), 2% Spirulina (S) + 8% Bilberry (B)) were prepared using a standard protocol. Antioxidant potential was determined using 2,2-diphenyl-1-picrylhydrazyl (DPPH) and Ferric Reducing Antioxidant Potential (FRAP) assays. Utilizing a 5-point hedonic scale (1—Dislike very much, 2—Dislike a little, 3—Neither like nor dislike, 4—Like a little, 5—Like very much), 3 mini muffin formulations (chocolate, 1% S + 4% B, 2% S +8% B), were tested among consumer panelists, with 1% S + 4% B being the most acceptable based on taste, texture, color, aroma, appearance, etc. Texture (post-peak (N) of the mini muffin did not vary between chocolate and 1 S% + 4% B formulations;however, 2% S + 8% B was 1.09 times higher compared to its counterparts. pH, color, and water activity remained constant over the 9-day shelf-life period. The Spirulina and Bilberry muffins developed exhibited antioxidant activities (highest in 2% S + 8% B), and were accepted by the sensory panelists for color, taste, mouthfeel, and aroma (panelists preferred 1% S + 4% B). 展开更多

Increasing rice yield is therefore crucial for solving food shortage problem, ensuring food secruity, and reducing poverty. Given the vast population and limited per capita cultivated land in China, meeting food demands by increasing the yield per unit area with the aid of advanced sciences and technologies would be the only option. Several alternative measures for increasing crop yield, such as building water conservancy facilities, increasing fertilizer application, improving soil texture, forming interrelated cultivation techniques, more effective controlling of pests and diseases, and using of elite varieties, have been undertaken. Among these alternative measures, adopting elite varieties, particularly popularizing super hybrid rice, proves to be the most economical and effective option. 展开更多

Consumption pattern of beta carotene rich foods from 500 households of Coimbatore district was elicited. Through market surveys in four seasons namely: summer, south-west monsoon, north-east monsoon and winter, a year calendar of beta carotene rich foods was developed. The total and beta carotene contents of five commonly consumed beta carotene rich foods both in raw and cooked states were determined. Results indicated that greens were mainly purchased from market and consumed 2-3 times per week. Cooking loss was maximum in boiling and minimum in shallow fat frying. Curry leaves (Murraya koenigii),amaranth tender (Amaranthus gangeticus), agathi (Sesbania grandopra), and ponnanganni (Alternanthera sessilis) were the carotene rich foods available round the year. Cost of most greens was highest in summer and lowest in north-east monsoon. Within a cost of 13-14 ps in summer, 4-10 ps in south-west monsoon and north-west monsoon and 4-12 ps in winter season, the entire day's requirement of beta carotene (2400μg) could be obtained in the form of agathi/amaranth throughout the year: in the form of drumstick leaves and mint in south-west monsoon; as curry leaves and coriander leaves in winter and as agathi,paruppukeerai and amaranth in summer. From this year calendar, according to seasonal availability and cost, low-cost high carotene foods can be selected and used for increasing the beta carotene intake in the intervention programmes and in the community 展开更多

通过养殖实验和摄食过程摄像技术,首先研究了中华绒螯蟹幼蟹、早期成蟹,亚成体和成体的摄食行为差异,评价了不同发育阶段和不同性别中华绒螯蟹的摄食行为、摄食响应时间和摄食率差异,然后进一步比较了不同发育阶段中华绒螯蟹对冰鲜鱼、... 通过养殖实验和摄食过程摄像技术,首先研究了中华绒螯蟹幼蟹、早期成蟹,亚成体和成体的摄食行为差异,评价了不同发育阶段和不同性别中华绒螯蟹的摄食行为、摄食响应时间和摄食率差异,然后进一步比较了不同发育阶段中华绒螯蟹对冰鲜鱼、配合饲料、玉米和螺蛳的摄食选择性。结果表明:中华绒螯蟹的摄食行为可分为探索、定位、试探和摄食这4个阶段,其中探索和摄食耗时较长;就探索阶段的耗时和摄食响应时间而言,幼蟹和早期成蟹的雌体显著短于雄体,而亚成体和成体阶段雄体显著短于雌体;就摄食而言,各发育阶段雌体的摄食耗时均高于雄体;就摄食率而言,中华绒螯蟹摄食率随着发育阶段的增加呈现显著下降趋势,而雌雄蟹间无显著差异;就不同饵料的摄食选择性结果而言,不同发育阶段的中华绒螯蟹对不同饵料的首次摄食频率从高到低顺序均是冰鲜鱼>配合饲料>玉米>螺蛳;雌、雄成蟹对冰鲜鱼和配合饲料的摄食响应时间均无显著差异,但均显著低于对玉米和螺蛳的。综上,不同发育阶段和不同性别中华绒螯蟹的摄食行为存在显著差异,亚成体阶段是雌、雄中华绒螯蟹摄食行为发生转变的重要发育阶段,成蟹优先摄食冰鲜鱼与配合饲料。 展开更多

【目的】明确重要生态因素对暗黑鳃金龟Holotrichia parallela幼虫种群的影响,从而为预测预报其发生提供理论依据。【方法】在室内采用自动控制温度、人工控制湿度的方法,观察温度、湿度和食物对暗黑鳃金龟幼虫存活率及发育历期的影响... 【目的】明确重要生态因素对暗黑鳃金龟Holotrichia parallela幼虫种群的影响,从而为预测预报其发生提供理论依据。【方法】在室内采用自动控制温度、人工控制湿度的方法,观察温度、湿度和食物对暗黑鳃金龟幼虫存活率及发育历期的影响。【结果】结果表明,20~28℃适宜暗黑鳃金龟1-2龄幼虫的存活,其中24℃时存活率最高,达到74.9%±3.1%;12℃时发育历期最长,32℃时发育历期最短,20℃和24℃下发育历期适中。土壤含水量为7%~19%时暗黑鳃金龟1-2龄幼虫均能存活;其中在7%和19%时,幼虫存活率低于50%,在25%时幼虫全部死亡;在土壤含水量为16%时存活率最高,达到76.4%±2.5%。在供试的6种食物(小麦根、玉米根、棉花根、花生根、大豆根和马铃薯块)中,喂饲花生根的暗黑鳃金龟幼虫存活率最高,达到68.7%±3.2%。取食不同食物的幼虫发育历期差异显著,其中取食花生根的暗黑鳃金龟幼虫期最短,整个幼虫期仅为259 d(3龄幼虫期为227 d);而取食棉花根的幼虫期最长,整个幼虫期为346 d(3龄幼虫期为303 d)。【结论】温度、土壤含水量和食物对暗黑鳃金龟幼虫的存活和生长发育均具有显著影响;在幼虫期调控温湿度及改变其寄主植物结构可有效控制其发生危害。 展开更多
