To ensure the safety of consumers, prolong the shelf life of moon cake and reduce the cost of manufacturing and marketing enterprises, the optimization of preservative formula and the shelf life of cantonese style moo...To ensure the safety of consumers, prolong the shelf life of moon cake and reduce the cost of manufacturing and marketing enterprises, the optimization of preservative formula and the shelf life of cantonese style moon cake were studied. Through single and compound formula preservative test, the results showed that potassium sorbate and sodium dehydroacetate could inhibit the microorganisms in the moon cake, but the inhibitory effect of sodium dehydroacetate was stronger than that of potassium sorbate; and the combination of potassium sorbate and sodium dehydroacetate had a synergistic effect, and the best formula is 'potassium sorbate 0.44 g/kg mixed with sodium dehydroacetate 0.38 g/kg. A batch of moon cake was prepared with the best preservative formula, then the total number of colonies, molds and coliform group in the samples were detected by random sampling at irregular intervals. The total number of molds exceeded the limit on the 187^th d, and it indicated that the shelf life of the product was 187 d. Compared with the conventional 15-day shelf life, this research greatly prolongs the sheff life of cantonese style moon cake, and cut down the cost of moon cake enterprises. The aim of this work was to explore the physicochemical and structural properties,lipid oxidation and antioxidant capacity of the peptides extracted from Cantonese cured meat and as well as to investigate the effect o...The aim of this work was to explore the physicochemical and structural properties,lipid oxidation and antioxidant capacity of the peptides extracted from Cantonese cured meat and as well as to investigate the effect of drying time on the sarcoplasmic and myofibrillar proteins of Cantonese cured meat.The results suggested that salting out,protein oxidation and heat treatment were closely related to surface hydrophobicity and the secondary structure of peptides was changed by processing.And the peroxide value and the value of tributyltin compounds were different in evaluating the degree of lipid oxidation.Glu and His were the major amino acid.The approximate molecular weights of the sarcoplasmic proteins and myofibrillar proteins ranged from 31 kDa to 50 kDa and 66 kDa,respectively.The results indicated that reducing the levels of protein oxidation and improvement of the antioxidant properties should be of great interest to preserve the nutritional quality of meat products and prolong preservation period.展开更多

This study focuses on the localized practice of the“Post-View-Purchase-Post”consumption loop(also referred to as the“Pretty Food Cycle”)driven by the Xiaohongshu platform within the context of Guangzhou’s food co...This study focuses on the localized practice of the“Post-View-Purchase-Post”consumption loop(also referred to as the“Pretty Food Cycle”)driven by the Xiaohongshu platform within the context of Guangzhou’s food consumption.By deconstructing the loop’s operational dynamics across three dimensions-power agents,behavioral logic,and spatial order-empirical analysis reveals a structural conflict between the standardized digital loop logic(visual-first and fast-paced)and the genetic traits of Cantonese food culture(“wok hei”authenticity and slow-paced social dining).On the one hand,the loop mechanism reshapes culinary authority through a value definition model led by KOLs/KOCs(Key Opinion Leaders/Consumers)and collectively scored by users.On the other hand,it encounters strong resistance and revision from local cultural genes.For instance,the cultural reverence for“wok hei”leads to collective downrating of photogenic dishes that lack authentic cooking essence,while pragmatic consumerism gives rise to phenomena such as the popularity of the“8-yuan pork knuckle rice,”which deconstructs the aesthetic elitism of food presentation.This research reveals the dual effects of the loop mechanism in both adapting to and dissolving regional cultural symbols(such as“yāt jūng léuhng gin”,i.e.,a pot of tea and two dim sum pieces).It also develops a“Cultural Discount Rate”evaluation model to assess cultural risks(mild symbolization≤20%,moderate authenticity loss 20-50%,severe alienation≥50%).Furthermore,it proposes three principles for building a sustainable consumption loop:authenticity anchoring,intergenerational permeability,and algorithmic fairness.The study argues that the“Pretty Food Cycle”essentially functions as a tool of digital colonization.Ignoring the cultural discount effect may lead to a spatial restructuring characterized by“digital eateries displacing wok hei small shops”-as seen in the wave of dessert shop closures on Baohua Road.However,through the assertion of user rating rights(e.g.,the 4.8 score comeback of“Ma Ji Store”),consumers demonstrate the counter-disciplinary potential of digital civic sovereignty against platform hegemony.展开更多

Nitrite and biogenic amines(BAs)are widely found in fermented vegetables,while there is no research about the nitrite and BAs of Cantonese pickle.Therefore,the nitrite and BAs contents of 20 commercial Cantonese pickl...Nitrite and biogenic amines(BAs)are widely found in fermented vegetables,while there is no research about the nitrite and BAs of Cantonese pickle.Therefore,the nitrite and BAs contents of 20 commercial Cantonese pickles were analyzed.Among these Cantonese pickles,the nitrite levels of samples 9(23.95),11(58.68)and 19(46.64 mg/kg)exceeded the limit standard,and the total BAs concentration of sample 12(1143.29 mg/kg)above the recommended safety limit.Then three lactic acid bacteria(LAB)with the higher abilities of degrading nitrite and BAs were selected from the pickle samples with low nitrite and BAs concentration,which were identified as Lactiplantibacillus plantarum S1,L.plantarum S14 and Limosilactobacillus fermentum G9,respectively.Furthermore,in order to evaluate the application potential of screened LAB in the control BAs and nitrite in Cantonese pickle,the influences of these three LAB on nitrite,BAs,organic acids,and volatile compounds of Cantonese pickles were investigated.Compared to natural fermentation group,the nitrite-peak of inoculation fermentation groups were smaller(<16 mg/kg),and their BAs contents were always at lower levels(<51 mg/kg).Moreover,these selected LAB could enrich the concentration and type of organic acids and volatile substances in Cantonese pickle.Therefore,it could be concluded that these three LAB were potential for controlling nitrite and BAs in Cantonese pickle.展开更多

We propose a hybrid system with porc...Accurate recognition of modern and traditional porcelain styles is a challenging issue in Cantonese porcelain management due to the large variety and complex elements and patterns. We propose a hybrid system with porcelain style identification and image recreation modules. In the identification module, prediction of an unknown porcelain sample is obtained by logistic regression of ensembled neural networks of top-ranked design signatures, which are obtained by discriminative analysis and transformed features in principal components. The synthesis module is developed based on a conditional generative adversarial network, which enables users to provide a designed mask with porcelain elements to generate synthesized images of Cantonese porcelain. Experimental results of 603 Cantonese porcelain images demonstrate that the proposed model outperforms other methods relative to precision, recall, area under curve of receiver operating characteristic, and confusion matrix. Case studies on image creation indicate that the proposed system has the potential to engage the community in understanding Cantonese porcelain and promote this intangible cultural heritage.展开更多

My present paper is not intended to discuss the topic of identity on the platform of politics, or the postcolonial studies such as transculturation or cultural hybridty. But instead, I am far more interested in locating such issue on the aesthetic dimension of collective memory, which is revealed in two local contemporary Hong Kong compositions. In the process of shaping and reshaping a form of"HongKongeseness" in which the composers tend to create and the local listeners tend to experience, albeit transient, can appear in every nuance of the sonic metaphor embedded in the pre-existing indigenous tunes of a self-contained compositional work.展开更多

文摘Guangdong, as one of the many tourist attractions in China, has gained increasing popularity among travelers around the globe. The image of the place is by and large determined by several respects, among which, the most prominent is no other than the food, Cantonese cuisine, whose dish names are usually rich in metaphors. This paper aims to analyze the metaphors embedded deeply in the dish names, with hope to decipher the mapping from the source domain, or the metaphorical image, to the target do?main, so as to help deliver a viable solution to translate them, and improve the image of Cantonese cuisine.
文摘Code-switching is a daily affair in multilingual communities.A set of negotiation system exists in the conversations made by speakers and hearers,which is used to test whether the participants have such kind of linguistic repertoire to handle codeswitching,in order to take different conversation strategies to keep the conversation going on or to end it.With the assistances of several ways of analysis applied,including fieldwork and conversational analysis,this paper focuses on the social motivation and pragmatic model of code-switching between Cantonese and English.

文摘This study focuses on the localized practice of the“Post-View-Purchase-Post”consumption loop(also referred to as the“Pretty Food Cycle”)driven by the Xiaohongshu platform within the context of Guangzhou’s food consumption.By deconstructing the loop’s operational dynamics across three dimensions-power agents,behavioral logic,and spatial order-empirical analysis reveals a structural conflict between the standardized digital loop logic(visual-first and fast-paced)and the genetic traits of Cantonese food culture(“wok hei”authenticity and slow-paced social dining).On the one hand,the loop mechanism reshapes culinary authority through a value definition model led by KOLs/KOCs(Key Opinion Leaders/Consumers)and collectively scored by users.On the other hand,it encounters strong resistance and revision from local cultural genes.For instance,the cultural reverence for“wok hei”leads to collective downrating of photogenic dishes that lack authentic cooking essence,while pragmatic consumerism gives rise to phenomena such as the popularity of the“8-yuan pork knuckle rice,”which deconstructs the aesthetic elitism of food presentation.This research reveals the dual effects of the loop mechanism in both adapting to and dissolving regional cultural symbols(such as“yāt jūng léuhng gin”,i.e.,a pot of tea and two dim sum pieces).It also develops a“Cultural Discount Rate”evaluation model to assess cultural risks(mild symbolization≤20%,moderate authenticity loss 20-50%,severe alienation≥50%).Furthermore,it proposes three principles for building a sustainable consumption loop:authenticity anchoring,intergenerational permeability,and algorithmic fairness.The study argues that the“Pretty Food Cycle”essentially functions as a tool of digital colonization.Ignoring the cultural discount effect may lead to a spatial restructuring characterized by“digital eateries displacing wok hei small shops”-as seen in the wave of dessert shop closures on Baohua Road.However,through the assertion of user rating rights(e.g.,the 4.8 score comeback of“Ma Ji Store”),consumers demonstrate the counter-disciplinary potential of digital civic sovereignty against platform hegemony.
文摘Gē(歌)and Gē(戈) rhymes were not separated in Lu Fayan's(陆法言) QiēYùn (《切韵》)and Wang Renxu's(王仁昫)Kān MiùBǔQuēQiēYùn(《刊谬补缺切韵》),but were separated in Sun Mian's(孙愐)Tianbao edition of Táng Yùn(《唐韵》)in the Tang Dynasty.There is a close correspondence between Cantonese finals and those of Middle Chinese.The pronunciation of Gē(歌)and Gē(戈)rhymes in the Cantonese rhyme book Fēn Yùn CuōYào(《分韵撮要》),the Cantonese pronunciation recorded by missionaries,and modern Cantonese proves that the separation of Gē(歌)and Gē(戈)rhymes was mainly due to the opposition between open and closed syllables,rather than different main vowels.

文摘Nitrite and biogenic amines(BAs)are widely found in fermented vegetables,while there is no research about the nitrite and BAs of Cantonese pickle.Therefore,the nitrite and BAs contents of 20 commercial Cantonese pickles were analyzed.Among these Cantonese pickles,the nitrite levels of samples 9(23.95),11(58.68)and 19(46.64 mg/kg)exceeded the limit standard,and the total BAs concentration of sample 12(1143.29 mg/kg)above the recommended safety limit.Then three lactic acid bacteria(LAB)with the higher abilities of degrading nitrite and BAs were selected from the pickle samples with low nitrite and BAs concentration,which were identified as Lactiplantibacillus plantarum S1,L.plantarum S14 and Limosilactobacillus fermentum G9,respectively.Furthermore,in order to evaluate the application potential of screened LAB in the control BAs and nitrite in Cantonese pickle,the influences of these three LAB on nitrite,BAs,organic acids,and volatile compounds of Cantonese pickles were investigated.Compared to natural fermentation group,the nitrite-peak of inoculation fermentation groups were smaller(<16 mg/kg),and their BAs contents were always at lower levels(<51 mg/kg).Moreover,these selected LAB could enrich the concentration and type of organic acids and volatile substances in Cantonese pickle.Therefore,it could be concluded that these three LAB were potential for controlling nitrite and BAs in Cantonese pickle.

文摘Accurate recognition of modern and traditional porcelain styles is a challenging issue in Cantonese porcelain management due to the large variety and complex elements and patterns. We propose a hybrid system with porcelain style identification and image recreation modules. In the identification module, prediction of an unknown porcelain sample is obtained by logistic regression of ensembled neural networks of top-ranked design signatures, which are obtained by discriminative analysis and transformed features in principal components. The synthesis module is developed based on a conditional generative adversarial network, which enables users to provide a designed mask with porcelain elements to generate synthesized images of Cantonese porcelain. Experimental results of 603 Cantonese porcelain images demonstrate that the proposed model outperforms other methods relative to precision, recall, area under curve of receiver operating characteristic, and confusion matrix. Case studies on image creation indicate that the proposed system has the potential to engage the community in understanding Cantonese porcelain and promote this intangible cultural heritage.
文摘When the umbrellas were held up against the tear gas attack in the protest on September 28, 2014, the hot issue raised by the marathon-like Yellow Umbrella Movement was not only the matter of politics but also a coincidence created for the Hong Kong locals to face, or to be faced with an already moot cliche: How the Hongkongese can redef'me and redeem their almost lost socio-cultural identity, particularly under the increasingly hegemonic influences and the socio-cultural invasion of the mainland after the 1997 Handover. My present paper is not intended to discuss the topic of identity on the platform of politics, or the postcolonial studies such as transculturation or cultural hybridty. But instead, I am far more interested in locating such issue on the aesthetic dimension of collective memory, which is revealed in two local contemporary Hong Kong compositions. In the process of shaping and reshaping a form of"HongKongeseness" in which the composers tend to create and the local listeners tend to experience, albeit transient, can appear in every nuance of the sonic metaphor embedded in the pre-existing indigenous tunes of a self-contained compositional work.

文摘Languages and linguistic resources transport from one locality to another,adapting to the norms,customs,and regulations of a new locality.This process involves translocalization.Translocalization emphasizes the movement of linguistic resources against the backdrop of globalization and the combination or reframing of resources from different localities.This research explores the extent to which translocalization is reflected by the linguistic landscapes of three distinct commercial areas in Guangzhou,China.It goes on to discuss how translocalization works together with social rescaling to incur the movement of linguistic resources and to result in distinct linguistic landscapes of the three commercial areas.It concludes that some languages or linguistic resources,such as English,pinyin and traditional Chinese writing,are transported to local contexts for the purpose of rescaling,whereas other languages or dialects,like Cantonese,might gradually lose their function of rescaling and retain its function in indexing local identity and solidarity.This study calls for more attention to the local resources and contexts in linguistic landscape studies.It argues for the indexical function of linguistic resources in social rescaling and city planning.
文摘Sliced boiled chicken is a kind of Chinese food which has a history of more than two hundred years.At the very beginning,it was offered to customers as a kind of fast food.After two centuries’development,it has become a cultural symbol of Guangdong region.In other words,the significance of sliced boiled chicken has transcended the food itself.It is an essential part of Cantonese life.Because it is a dish that is relatively easy to cook,we can see sliced boiled chicken everywhere in Guangdong Province,China.No matter in the city or in the countryside,in upscale restaurants or in fast food restaurants,if you want,you can easily find a place to enjoy the delicacy of sliced boiled chicken.However,most of the people just know to eat sliced boiled chicken.Only a small part of them will notice the history behind this dish.At the same time,though this dish is seen as a cultural symbol,most people just see it as a money making tool which greatly disturbs its development.
