Kombucha is a traditional fermented tea beverage that has gained significant scientific attention due to its diverse biological activities and potential health benefits.However,despite extensive research on its functi...Kombucha is a traditional fermented tea beverage that has gained significant scientific attention due to its diverse biological activities and potential health benefits.However,despite extensive research on its functional properties,the global distribution of studies and research trends have not been fully mapped and documented.Thus,this review aims to synthesise the existing literature and conduct a bibliometric analysis of research on the biological activities of kombucha,specifically on antioxidant,antimicrobial,antidiabetic,and anti-obesity properties.Literature synthesis complements the bibliometric analysis by visually evaluating research trends and publication patterns using quantitative tools such as VOSviewer Software.Bibliographic coupling analysis showed five major thematic clusters:(1)Phytochemical composition and health-promoting properties of kom-bucha;(2)Microbial dynamics influence on the development of functional kombucha;(3)Metabolomics ap-proaches for profiling kombucha;(4)Correlation of multidimensional analytical approaches with sensory quality in kombucha,and(5)Sustainability-oriented and innovative applications of kombucha fermentation.Cooccurrence analysis further revealed three key clusters,including Phytochemical and Antioxidant Profile,Mi-crobial Ecology and Fermentation,and Experimental Models and Pharmacological Studies.Furthermore,the global research distribution based on the Scopus database demonstrated strong geographical research in China,reflecting the country's historical association with kombucha,supported by robust research infrastructure and growing interest in functional foods.Hence,this bibliometric review highlights the crucial role of biological activities in kombucha,which offer insights to guide its development and identify future research directions.展开更多
