Prodigiosin is a natural red pigment with significant biological activity,showing promising potential as a colorant in the food industry due to its antioxidant and antibacterial properties.In this study,a Serratia mar...Prodigiosin is a natural red pigment with significant biological activity,showing promising potential as a colorant in the food industry due to its antioxidant and antibacterial properties.In this study,a Serratia marcescens strain was isolated from the intestine of oysters,and it was found that G2 and G3 culture media enhanced the red intensity of the bacterial culture,with prodigiosin constituting 11.01%of the extract.The purified prodigiosin exhibited strong iron chelation and antioxidant properties.Foods such as red meat,animal liver,and spinach,which are rich in iron,can cause iron accumulation and trigger ferroptosis,particularly in iron-sensitive organs like the liver,leading to oxidative stress and cell death through the Fenton reaction.While traditional iron chelators may have side effects,prodigiosin’s potential as a natural chelator was explored.The study found that prodigiosin significantly inhibits ferroptosis,reduces intracellular iron levels,and regulates key genes involved in iron metabolism.Additionally,its antioxidant activity contributes to its protective effects.These findings suggest that prodigiosin could serve as both a natural food colorant and a functional ingredient with health benefits,supporting oxidative balance,redox homeostasis,and protection against iron-induced liver damage.Prodigiosin shows promise for applications in the food and health supplement industries,offering potential benefits in functional foods and therapeutic formulations.展开更多
