摘要
酵素作为一种微生物发酵获得的产品,其含有多种有效活菌、营养物质、有机酸及功效酶等活性物质,可广泛地应用于食品加工、污染防治及农业生产等领域。在农业生产中,酵素具备促进作物生长、防治病虫害、改善圈舍环境及提高动物免疫力等功能。通过文献的阅读和整理,介绍了酵素的种类、生产工艺、有效成分及其在农业生产中的应用,明确了酵素今后的研究应当侧重于酵素规模化、标准化的生产及不同原料制备的酵素中微生物群落及其代谢物种类和含量的分析,可为酵素在农业生产中的进一步应用提供参考,对推动农业可持续发展具有一定意义。
As a product obtained by microbial fermentation,ferment contains a variety of active substances such as effective living bacteria,nutrients,organic acids and functional ferments.Therefore,it can be widely used in food processing,pollution prevention and agricultural production.In agricultural production,ferments have the functions of promoting crop growth,controlling pests and diseases,improving the enclosure environment and improving animal immunity.In this paper,the types,production processes,active ingredients and their application in agricultural production of ferment were introduced by reading and sorting the literature.It was clear that the future research of ferment should focus on the large-scale and standardized production of ferment and the analysis of microbial community and its metabolites in ferment prepared from different raw materials.It provided a reference for the further application of ferment in agricultural production and is of significance to promote the sustainable development of agriculture.
