酶法提取核桃粕膳食纤维功能特性的研究

摘要 本研究以榨油后的副产物核桃粕为原料,采用复合酶法提取核桃粕中的总膳食纤维(TDF)、可溶性膳食纤维(SDF)和不溶性膳食纤维(IDF),比较了3类膳食纤维的微观结构、理化特性及体外降糖降脂活性。结果表明,核桃粕TDF显示出最优的持水性能(11.38 g/g)和持油能力(10.45 g/g),并在α-淀粉酶与胰脂肪酶抑制方面表现出稳定活性。IDF具有最大的膨胀特性(8.07 mL/g),其多酚含量和DPPH自由基清除能力高于TDF和SDF。SDF在体外模拟胃环境中显示出最强的胆固醇吸附能力(0.86 mg/g),TDF在模拟肠道环境中显示出最强的胆固醇吸附力(0.69 mg/g)。3类膳食纤维的葡萄糖吸附能力随浓度梯度增加呈线性增强趋势,但组间差异未达统计学显著性(P>0.05)。 In this study,total dietary fiber(TDF),soluble dietary fiber(SDF),and insoluble dietary fiber(IDF)were extracted from walnut meal byproducts via a multi-enzyme method.Comprehensive analyses were performed to compare the microstructure,physicochemical properties,and in vitro hypoglycemic and hypolipidemic activities.Results demonstrated that TDF exhibited the optimal water-holding capacity(11.38 g/g)and oil-binding capacity(10.45 g/g),and showed stable inhibitory activities againstα-amylase and pancreatic lipase.IDF possessed the maximum swelling capacity(8.07 mL/g),and its polyphenol content and DPPH radical scavenging capacity were higher than those of TDF and SDF.SDF demonstrated the strongest cholesterol adsorption capacity(0.86 mg/g)under simulated gastric conditions,whereas TDF showed the strongest cholesterol adsorption capacity(0.69 mg/g)in the simulated intestinal environment.The glucose adsorption capacities of the three types of dietary fibers exhibited a linear increasing trend with the increase of concentration gradient,but the differences among groups did not reach statistical significance(P>0.05).
