适制黄大茶的茶树品种评价模型构建与应用 被引量:1

Construction and Application of an Evaluation Model for Tea Cultivars Suitable for Large-leaf Yellow Tea Production

摘要 黄大茶是中国传统六大茶类之一,因其具有健康功效和典型的“三黄”特征而深受广大消费者的喜爱。然而,由于缺乏合适的黄大茶茶树品种评价体系,限制了黄大茶适制性茶树品种(品系)的鉴定和高效利用。研究采用德尔菲法,通过问卷调查、专家打分和小组讨论,明确并建立了包括5个一级指标(感官品质、生化成分、农艺性状、抗逆性和市场价格)和22个二级指标在内的黄大茶适制性茶树品种(品系)综合评价体系。此外,通过层次分析法确定了一级指标权重范围为0.107~0.434,以感官品质权重最高;权重最高的二级指标为滋味得分。利用上述评价模型对21个茶树品种(品系)进行综合评价的结果表明,柿大茶黄种、金鸡种和雨前大芽综合得分排名前三,是适制黄大茶的优质茶树品种(品系)。综上所述,研究构建了适制黄大茶的茶树品种评价模型,并筛选出适制性强的品种(品系),可为黄大茶茶树品种定向选育提供参考。 Large-leaf yellow tea,one of six traditional Chinese tea types,is widely favored by consumers for its health benefits and typical"three yellow"characteristics(yellow appearance,infusion and infused leaves).However,the lack of an appropriate evaluation system for tea cultivars used in the production of large-leaf yellow tea has limited its identification and efficient utilization.This study used the Delphi method to develop an evaluation model for tea cultivars suitable for large-leaf yellow tea production through surveys,scoring,and discussions of experts.The evaluation model included five primary indexes(sensory evaluation,biochemical components,agronomic traits,resistance and market price)and 22 secondary indexes.The Analytic Hierarchy Process(AHP)was used to determine the weight value of the primary indexes,which ranged from 0.107 to 0.434.Sensory evaluation was assigned the highest weight,while taste was the secondary index with the highest weight.Based on the comprehensive evaluation model,‘Shidacha Huangzhong’,‘Jinjizhong’,‘Yuqiandaya’were identified as the top three tea cultivars that was highly suitable for large-leaf yellow tea production.In summary,this study constructed an evaluation model for tea cultivars suitable for large-leaf yellow tea production and identified multiple cultivars(varieties)with high suitability,which provided a reference basis for breeding of cultivars suitable for large-leaf yellow tea processing.
