摘要 电喷雾技术是静电纺丝技术的变体,具有操作简单、制备高效的特点。本文介绍了电喷雾技术的优势、原理、产品及其释放机制,概述了其在生物活性物质胶囊化中的应用,以期为其在食品科学、生物医药等领域的应用提供更多理论依据。 Electrospray technology is a variant of electrospinning technology and has the features of simple operation and high preparation efficiency.This article introduces the advantages,principles,products and release mechanisms of electrospray technology,and summarizes its application in the encapsulation of bioactive substances,with the aim of providing more theoretical basis for its application in fields such as food science and biomedicine.
