摘要
利用微生物发酵餐厨垃圾可制备单细胞蛋白(Single Cell Protein, SCP),此工艺在实现资源再利用的同时还拓展了蛋白生产渠道并且缓解了相关行业对蛋白的需求。本文从餐厨垃圾处理现状、SCP合成以及餐厨垃圾制备SCP工艺的研究现状及存在问题、SCP应用以及未来前景进行讨论,以期为餐厨垃圾的高效资源化利用提供依据。
The increasing food waste has brought unprecedented challenges to the traditional food waste disposal industry. Some microorganisms can use food waste to produce single cell protein(SCP). This process can synthesize single cell protein while processing food waste, which can be used for feed or food processing. The process also expands the protein production channel and alleviates the demand for protein in related industries while enabling the reuse of resources. This paper discusses the current situation of food waste treatment, the relevant research progress about synthesis of SCP, the application of SCP and the future prospect, in order to provide a basis for the efficient utilization of food waste.
