摘要
鳜(Siniperca chuatsi)、黄颡鱼(Pelteobagrus fulvidraco)和虹鳟(Oncorhynchus mykiss)是中国重要的淡水经济养殖鱼类,养殖规模和消费市场逐年扩大,其质量安全问题成为公众关心的热点之一。本研究概述3种鱼类及其产业近5年发展趋势,并对其近10年的质量安全状况变化以及目前产业存在的主要质量安全问题和隐患进行分析。结果显示,3种鱼类主要的质量安全隐患集中在药物残留上,其中鳜产业主要安全问题为药物(孔雀石绿)残留。同时,针对行业各环节存在的问题,本研究总结和提出相关对策和建议,以期为养殖、流通和加工等规范的建立提供参考。
Siniperca chuatsi,Pelteobagrus fulvidraco,and Oncorhynchus mykiss are commercially important freshwater fishes in China.The fish quality and safety problem has caused public attention with the development of aquaculture and consumer market.In the present research,we summarized the trend of aquaculture development in five years of the three fishes and analyzed the changes of quality and safety status in ten years and the major problems and risks.The results showed that drug(malachite green)residue was the main problem in aquaculture of Siniperca chuatsi.Despite there are few studies about the quality and safety problem in the aquaculture of Pelteobagrus fulvidraco and Oncorhynchus mykiss,the drug residue problem is still the main risk of each fish industry.In summary,we presented some suggestions for the problems existed in aquaculture sectors in order to provide references for establishing the norms including farming,flowing and processing of aquatic products.
