摘要
对发酵棕榈仁粕水溶性蛋白及醇沉小肽,寡糖的含量测定。通过水提及醇沉法对发酵棕榈仁粕分别进行活性物质的提取,利用福林酚法对总蛋白及小肽进行含量测定,利用改良苯酚-硫酸法对寡糖进行含量测定。结果:通过对发酵棕榈仁粕活性物质含量测定,得出每克发酵棕榈仁粕中水提总蛋白含量为19.1579 mg,80%醇沉提取得到的小肽含量为14.5102 mg,80%醇沉提取得到的寡糖的含量为175.5923 mg,50%醇沉提取得到的寡糖含量为286.5267 mg。利用福林酚法对发酵棕榈仁粕水提及80%醇沉的总蛋白,小肽测定确定其具体含量;利用改良苯酚-硫酸法分别对50%,80%醇沉提取得到的寡糖含量测定,说明50%醇沉提取得到的寡糖含量要大于80%醇沉提取得到的寡糖含量。

Conclusion： Foline- phenol method was used to ferment palm kernel meal water to mention 80% alcohol and total protein, polypeptide measurementto determine the specific content; For 50% respectively using modified phenol - sulfuric acid method, sank 80% alcohol extractof oligosaccharide content determination, that sank 50% alcohol extract of oligosaccharide content more than 80% alcohol sinkextract content of oligosaccharid
