摘要
为了比较评价松浦镜鲤、散鳞镜鲤和德国镜鲤的营养价值，我们对上述三种鲤鱼的含肉率及肌肉营养成分进行了分析。测定结果表明，含肉率：松浦镜鲤为６２．８１％，散鳞镜鲤为６４．２９％，德国镜鲤为５５．７１％。松浦镜鲤含肉率比德国镜鲤高７．１％，但低于散鳞镜鲤，界于双亲之间。松浦镜鲤肌肉的蛋白质、脂肪含量都高于亲本，而水分含量低于亲本。
Meat Content rate and nutritive compostion in muscle of Germemy,Scattered and songpu Mirror carp were analysed so that nutritive value can be compared. Results of Measurement show that meat content rate of Germany Scattered and songpu mirror csrp is respectively 55. 7%, 64. 29% and 62. 81 %. Meat Content rate of Songpu mirror is higher than that of Germang mirror carp by 7. 1 %,but? lower than that of Scattered carp. It is between the two parents.Protein and fat content in muscle of Songpu Mirror carp are higher than that of parents and its water content in muscle is lower than of parents yet.
