介绍了玉米醇溶蛋白物理性质、化学结构及生物特性,及其在制作可食性包装、功能肽、保鲜食品等食品工业方面的应用状况。玉米醇溶蛋白在实际应用中存在提取成本高,成膜机械性能差等缺点。随着技术不断改进,玉米醇溶蛋白前景广阔。
The physical properties ,chemical structure and biological paper.h can be widely used in food industry such as edible packaging properties of zein are , functional peptides, introduced in this fresh food with its special properties.Zein had high cost in extracting process and its mechanical property was poor.But with the progress of science and technology, zein would eliminate the disadvantage and had a bright future.
