葵花籽油加热过程中异丁烯醛含量变化趋势的分析 被引量:2

Analysis of content trends of methacrolein in sunflower oil during heating process

摘要 分析葵花籽油在加热过程中显著变化的特征性组分,考察其含量变化趋势。采用顶空采样方式对样品中的挥发性成分进行提取富集,气相色谱-质谱法(GC-MS)的扫描(scan)模式进行定性监测,选择离子监测(SIM)模式进行定量分析。结果发现异丁烯醛在葵花籽油加热过程中可增量产生,加热30min时其含量达到最高,随后含量逐渐减小,加热6h后含量依然显著高于原油。因此,寻找到一种可供研究的特异性指标-异丁烯醛,为葵花籽油的加热过程质量控制技术研究提供了一定的思路。 To analysis characteristic components in sunflower oil which was change significantly during heating process. Using headspace sampling (HS) methods to extract the volatile components for extraction enrichment, gas chromatography-mass spectrometry (GC-MS) scan mode for monitoring, SIM mode for quantitative analysis. Methacrolein in the sunflower oil during heating could be incrementally generated, the content reached the highest when heated for 30 min, subsequently the content gradually decreases, and the content of Methacrolein was still significantly higher than the original oil after heating 6 h. This paper studied the quality change of the sunflower oil during the heating process, find out a specific indicator which is available for research, and provided some ideas for heating oil.
