摘要
用气相色谱测定了花溪个体农户饲养的乳牛 19头和山羊 16头鲜奶中的脂肪酸。牛奶和羊奶的各种脂肪酸的平均含量分别为 :豆蔻酸 9 90 %和 10 0 9%、棕榈酸 2 5 55%和 2 5 10 %、硬脂酸 14 0 2 %和 11 55%、油酸 34 56 %和 31 79%、亚油酸 8 95%和 11 52 % ,其它脂肪酸 7 0 2 %和8 95% ,饱和脂肪酸和不饱和脂肪酸之比为 1 30∶1和 1 2
The fatty acids in fresh milk from 19 cows and 16 goats fed by farmers in Huaxi area were determined with gas chromatograph.The contents of fatty acids from the cows and goats are as follows:9 90% and 10 09%(for myristic acid), 25 55%and 25 10%(for palmitic acid),14 02 and 11 55%(for stearic acid),34 56% and 31 79%(for oleic acid),8 95 and 11 52%(for linoleic acid),7 02% and 8 95%(for other fatty acids).The ratios of saturated to unsaturated acids are about 1 30∶1(for cow's milk)and 1 29∶1(for goat's milk)
