摘要
中国调味品工业是一个历史悠久而方兴未艾的行业。早在5,000多年前,我国就有了盐加工调味品;大约在3,600年前就有五味之说,即甘、成、苦、辛、酸。可见,我国调味品的生产源远流长,一直延续相传。但是由于漫长的封建社会束缚了生产力的发展,使这一行业长期停留在古老的自然发酵阶段。直到20世纪40年代,全国除上海、天津、北京、济南、青岛和东北几家私人资本经营的调味品工厂外,绝大部分均以传统的手工作坊式作业。
China's seasoning industry has experienced rapid growth in the past few years. One striMng example is a new seasoning, blend whose production rose to one million tons in 1999, experiencing 20% annual growth. This article forecasts this flavorful industry's development in the 21st century.
