摘要
从过氧化苯甲酰的分子结构入手,阐述了其理化特性和用途。通过对过氧化苯甲酰的合成和作面粉添加剂的背景出发,探析了过氧化苯甲酰作为面粉添加剂的作用机理和安全性。通过试验比较了各种过氧化苯甲酰检测方法,提出了较好的检测方法。根据国内、国际食品添加剂使用标准,指出了过氧化苯甲酰作为面粉添加剂的可行性;同时针对当前一些在面粉中滥用过氧化苯甲酰添加剂的现状,提出了行之有效的应对措施。
The physical and chemical properties and uses of benzoyl peroxide were elaborated from its molecule structure.And then the function mechanism and safety of benzoyl peroxide as wheat flour additives were analyzed from its synthesis and its use as wheat flour additives.Various detection methods of benzoyl peroxide were compared so as to find the best one.The feasibility of benzoyl peroxide acting as the wheat flour additives was pointed out from the uses standards of wheat flour additives both at home and abroad;finally according to the abuse use of benzoyl peroxide as wheat flour additives,some effective measures were put forward.
