摘要
采用单因素试验、正交试验对从大曲中分离出来的毛霉进行固体发酵,对蛋白酶发酵条件进行优化,并对正交实验的产蛋白酶结果进行极差分析.结果表明:发酵条件的最优组合为:发酵时间72 h,料水比为1:1.6,扣瓶4次,麸皮装量5 g,产酶可达846 U/g.
A mucor isolated from special spirit was investigated to produce proteinase with solid fermentation state in this paper.Single factor experiment and orthogonal test were respectively carried out to optimize fermentation condition.The results showed that the optimal fermentation condition was 72 h fermentation time,1:6 of the ratio of solid to liquor,4 operation times and 5 g bran loading,under this condition,the highest of proteinase activity reached 846 U/g.
