葡萄皮渣中单宁的提取纯化及含量测定 被引量:36

摘要 以新疆葡萄酒厂的下脚料-白葡萄皮渣(白羽和雷司令)和红葡萄皮渣(赤霞珠)为原料,以丙酮为提取剂,分别在热水浴中热浸提单宁,经大孔树脂纯化、冷冻干燥得到粉末单宁。结果表明,白(红)葡萄皮渣中单宁最佳提取工艺为料液比1∶40(1∶30),水浴温度60℃(70℃),时间6h(7h),丙酮浓度50%(60%),提取率为3.80%(3.16%);单宁纯度为84.97%(78.85%)。 Using residue of white wine (Baiyu and Riesling) and red wine (Cabernet sauvignon) as raw material and acetone as extractant, tannin was extracted with hot water bathing, Tannin powder was obtained after purification with macroporous resin and freeze-drying, The results showed that the yield of tannin of white wine residue (red wine residue) was 3.80% (3.16%) under conditions of ratio of solid to liquid by 1:40, extracted under 60℃ (70 ℃) for 6 h (7 h) with concentration of acetone at 50% (60%), and the purity was 84.97% (78.85%).
