摘要
试验中采用沪酿3.042米曲霉为菌种,研究酱油三角瓶种曲培养的最佳条件为:水分50%,温度32℃,培养基为麸皮:面粉:葡萄糖之比8:1:1.恒温培养的孢子数优于调温培养.
Aspergillus Orgzae 3.042 was used to study of the best culture condition of soy sauce triangle - bottle Koji:Water 50% ;Temperature 32℃ ;culture medium bran:flour:glucose 8:1:1 .The spore number of stable temperature is more siutable than adjustable temperature's.
