Optimization of the emulsification system of phytosterols

摘要 针对植物甾醇难溶于水,容易出现油水分离等现象,探索研究了不同乳化条件下,复合乳化剂对植物甾醇乳化效果的影响,为植物甾醇的下一步开发利用作好基础。结果表明最佳工艺参数为:HLB值为8.5,在乳化温度为60℃,油水比为1∶3,乳化剂配方为司盘60∶吐温60∶蔗糖酯=41∶49∶10,乳化剂添加量为2%,此时的乳化效果最好。 Difficult for phytosterols dissolve in water, oil and water separation, and so prone to the phenomenon, this paper studies to explore the different emulsion conditions, the composite emulsifier on the emulsification effect of phytosterols, phytosterols to make the next step in the development and utilization of the foundation. The results showed that the best process parameters for: HLB value of 8.5, in the emulsification temperature 60 ℃, oil-water ratio of 1:3, the formula for the emulsifier Span 60:Tween 60:sucrose esters=41 : 49:10, emulsifier Adding amount of 2%, the best at this time of the emulsion.
