东北农牧交错带小尾寒羊营养素与生态环境的相关性分析

摘要 目的研究羊肉中营养素含量与草原类淹之间的关系,为合理开发利用草地资源,保护生态环境提供科学依据。方法采用常规方法测定肉品中水分、蛋白质、脂肪、灰分的含量,元素测定用电感耦合等离子体质谱仪检测。结果肉品中钠含量(mg/kg)在3个草原类型间有差异,其中Ⅲ型最高(Ⅰ类为628.17±46.36,Ⅱ类为620.17±49.03,Ⅲ类为737.67±48.64,F=7.824,P<0.05);Ⅲ型草原小尾寒羊肉品中锌含量(mg/kg)最高(Ⅰ类为27.20±1.39,Ⅱ类为32.97±4.82,Ⅲ类为36.16±7.29;F=8.734,P<0.05);Ⅲ型草原小尾寒羊肉品中硒含量(mg/kg)最低(Ⅰ类为0.048±0.012,Ⅱ类为0.048±0.007,Ⅲ类为0.011±0.002;F=19.006,P<0.05)。肉品中重金属的检出值均符合GB 18406.3-2001无公害畜禽肉安全的要求,肉品中氟含量高出国家标准2倍多。草原类型不同对肉品中常规营养成分、重金属和氟元素的含量无影响(均P>0.05)。结论东北农牧交错带小尾寒羊羊肉基本没有受到重金属元素的污染,肉品中硒元素含量偏低,氟元素含量偏高,与该区土壤中元素含量水平有关,应引起该地区人群关注。 Objective To study the relativity between element contents of mutton and type of grassland , to provide scientific evidence for the grassland exploitation and ecology environment protection. Methods The contents of water, protein, fat and ash in mutton were detected by general method, ICP - MS was used to determine elements content. Results The contents of Na, Zn, Se in mutton were significant difference among different grasslands, content of Na in grassland m was highest,type Ⅰ was (628.17 ±46.36) mg/kg,typo Ⅱ was (620.17 ±49.03) mg/kg,type m was (737.67 ± 48.64) mg/kg ,F=7. 824,P〈0.05; content of Zn in grassland Ⅱ was highest,type Ⅰ was (27.20 ±1.39)mg/kg,type Ⅱ was (32. 97 ±4. 82) mg/kg,type m was (36. 16 ±7. 29) mg/kg ,F=8. 734,P〈0.05; content of Se in grassland m was lowest, type Ⅰ was (0.048 ±0.012) mg/kg,type Ⅱ was (0.048 ±0.007) mg/kg ,type m was (0.011 ±0.002) mg/kg,F = 19. 006,P 〈 0. 05, which the conteats of heavy metal accorded with the national criferion of GB 18406. 3 - 2001. Content of F was 2 times more than the maximum residue limits. Type of grassland can not affect general nutrients components, heavy metal contents and F element of mutton. Conclusion There is no heavy metal pollution in the mutton , the level of trace elements in codetta is nearing lack of Se, content of F exceeds the maximum residue limits, which might be caused by the level of element in soil, so we should pay more attention to it.
