摘要
研究了十六烷基三甲基溴化铵 (CTAB ,表面活性剂 ) -正辛烷 -正辛醇反胶束溶液萃取大豆蛋白质 ,考察了水相pH、离子强度、有机相中表面活性剂浓度、助溶剂比、萃取时间等因素对大豆蛋白萃取率的影响 ,并从反胶束微观结构给予解释。研究表明 ,反胶束溶液萃取大豆蛋白的最佳条件为 :CTAB浓度 10mmol/L ,正辛醇∶正辛烷为 1∶4 (V/V) ,KCl浓度小于 10 0mmol/L ,pH 10 ,萃取时间 15min。
The effect factors on extracting soybean protein from an aqueous phase into reverse micelles,including the concentration of the surfactant,the rate of the solvent,the intension of the ion,the value of pH and the extraction time,were studied,and the results were explained in microcosmic strutrue of reverse micelles.The optimum extraction conditions are as following:the concentration of heradecyl trimethyl ammoinium bromide 10 mmol/L,the ratio of n atanol and octane 1∶4 (V/V),the concentration of KCl less than 100 mmol/L,pH 10,extraction duration 15 min.
